We hope you will join us at our first market of 2014 this coming Saturday!  It may be January, but the weather will feel more like April with a predicted high of 61 degrees with a few showers- don't forget that we will all be dry under the bridge.   If your stocks of local food are running low, you are in luck!  Many of our regular producers will be at the market this weekend!

We may not think of mushrooms as being seasonal, but they are!

If you haven't come to one of our Winter Markets, please visit us! 
We all set up in the upper portion under the bridge and make a cozy circle of incredibly delicious food.  Chances are that you will have a chance to chat with a neighbor or old friend, and you might even make some new acquaintances!

Here's a little about our cheeses and meats that will be at the market on Saturday! 

Handmade Farmstead Cheese 

Birchrun Blue -

The darling of the lot, this is Birchrun's signature cheese. Well balanced, with fruit forward flavors and a lovely, fudgy texture to boot!

 

Equinox -

pleasantly smooth and approachable

with sweet cooked butter and caramel flavors.

Fat Cat - Vaguely reminiscent of Caerphilly in it's bright, grassy flavor but entirely it's own character.

 

Red Cat - washed rind little stinker. Rich, meaty, with a velvety texture; the ultimate comfort cheese.

 

Herb and Garlic & Honey and Sea Salt spreads are some of our other cheeses that may turn up on the cheese board! 

  

Rose' Veal - milk and grass fed

Our veal animals are the male calves born on our farm.  We raise our veal on milk,grass and grass hay.  They are raised with care and respect, the way all of our animals are cared for.   

 

 
Birchrun Hills Farm is a family owned dairy farm in the highlands of Birchrunville, Chester County. Sue Miller and her family caringly handcraft raw milk cheese from the milk of their Holstein cows.

We will be there Saturday with as many eggs as our hens will give us (production has been way down with the frigid weather).  We will also have whole chickens, boneless skinless breasts and tenders, whole legs and wings.  We have a few whole turkeys still available, just email us if you would like one (will@deeprootsvalley.com).



 

Kelly and Will Smith are the fifth generation to farm Kelly's family's 150 acre farm located in Mohrsville, PA.   They raise poultry and beef on their beautiful pastures and are passionate about the environmental and health benefits of pasture raised beef, eggs, and chicken.

Wild for Salmon is a local business that provides fresh/frozen wild Alaskan sockeye salmon at a common good price. Wild for Salmon is owned and operated by Steve and Jenn Kurian of Bloomsburg, PA.

The salmon is caught by Jen and Steve in Bristol Bay, Alaska, during the months of June and July and brought home to be sold at farm markets, restaurants and health-food stores.

 Recipes

The shorter days and cool nights of early winter make cooking in a warm cozy kitchen a delight!  Here are some links to a few of our winter mushroom favorites!  We sent some of these recipes last year, but they are soooo good we had to do it again!

Mushroom Ragu with poached egg served over homemade coroutons
You can find most of the ingredients for this tasty dish at the market!  Mushrooms, eggs, & bread!  We love this for weeknight dinners with a simple salad and a glass of local Paradocx wine.

Mushroom Bourguinon
Leave it to the Smitten Kitchen to come up with a luscious version of this classic beef centered dish.  Serve it over some of Vera Pasta's pappardelle and try using some of Paradocx's barn red for the sauce.

Wild Mushroom and Blue Cheese Gallette
Okay, the title of this recipe actually says "Stilton", but the recipe calls for Stilton or "any other good-quality blue cheese." What could be better than Sue Miller's Birchrun Hills Blue?  And if you don't feel like making crust for a gallette?  Buy a baguette from St. Peters, and spoon the mixture on top of  slices.
