WHAT'S ON IN JULY?
RECIPE OF THE MONTH  
 
Sweet Potato Hash
Yummy for breakfast! 






Ingredients 
4 sweet potatoes
2 eggs - beaten
½ almond meal
¼ cup spring onions - chopped
¼ cup coconut oil
Salt and freshly ground black pepper to season

Method
Peel and then boil one of the sweet potatoes until soft and then mash
Peel the other three sweet potatoes and grate
Mix grated sweet potatoes with the mashed sweet potato
Add all the other ingredients and combine well
Heat coconut oil in a pan 
Drop large tablespoons of the mixture into the hot oil and flatten with a spatula
Cook on each side until golden brown
