SUMMER FUN AT
THE HIGHLANDS

Learn about the history and organic gardening in your own back yard! Mornings will be spent in The Highlands Mansion & Gardens, where campers will bring history to life as they engage in hands-on activities such as colonial sports and games, and nature and craft projects, as well as opportunities to explore the architecture of our 18th-century estate. Campers will spend their afternoons at Pennypack Farm at The Highlands participating in organic, sustainable farming. They and will learn about and taste produce grown on the farm. This is a great time of year for wild mid- and late-spring greens. We'll be looking for spinach-flavored lamb's-quarters, succulent purslane, mild-flavored lady's thumb, chewy violets, green bean-flavored Asiatic dayflower, sour sheep sorrel and wood sorrel, and spicy poor man's pepper. Chopped, mixed, and dressed, they'll make the best-tasting, most nutritious summer salad ever, and these greens make great potherbs as well.

We'll also find medicinal plants such as mullein, good for coughs; jewelweed, a poison ivy preventative that cures mosquito bites and soothes all skin irritations; and sassafras, a tonic that's the original basis of root beer.

Cob Oven

Help us build a pizza oven at The Highlands!!  Perfect for our Sunday Suppers!  We'll be able to harvest ingredients from the farm and make our own pizza!

This is a great opportunity to learn how to build a wood-fired pizza oven!  The workshop will be taught by regional expert SigiKoko of www.buildnaturally.com

In preparation for the cob oven, we will need to build a masonary base.  We are looking for gently used bricks for this project.  If you have brick to spare, please contact Diane - education@pennypackfarm.org
