Eating Healthy for One:
A Weekend in Review

I recently spent a weekend sans-husband, and while my 15-month-old was excellent company, I had to fend for myself when it came to cooking. It got me thinking about when I was single and I wondered: How in the world did I eat healthy? Not that there aren't plenty of products out there that target the single person who's trying to be and stay fit. But to be and stay fit and not eat frozen meals all the time? That's where it can feel tricky. Few people like to cook for one every night. It's time-consuming and if we're being honest with ourselves, it's somewhat depressing when there's no one there with us to enjoy a home-cooked meal. in Foil

About two months ago I finally attempted to “steam” some salmon in foil like I’ve always heard about people doing. My expectations were low; being the salmon lover I am I feared it would ruin one of my favorite proteins. Not so! This is a great option for the solo chef since it’s super easy and doesn’t require a lot of attention or time. Don’t like salmon?
