Farmin ain't fer wimps

Major breakdowns are never fun, or inexpensive, but when they happen this time of year they add an additional element of stress to the long list of variables that go along with farming.  This wheel shaft housing crack, along with way more than desirable rainfall will have us playing catch-up even more than usual.  The rainy stretch we have been experiencing is a double edge sword.  The blueberries, spring crops, and the Shiitake mushrooms are benifitting, but so are the weeds.  Wet soil makes it easy to hand weed the medium, and larger size weeds in the fields, but precice hoeing small weeds that are just getting a start around the vegetables is impossible because the mud sticks to the hoe heads.  We also space the vegetable rows for cultivating with our medium size tiller, but we can't till mud.

As we transition from the early season our vegetable beds are then prepared for crops like the late season "storage" onions pictured above.

We are still heavy on spring greens, but the share this week will include a few different items.

   Pac Choi, or Chinese Cabbage is a classic addition to stir fry, spring rolls, and soups.  This mild flavored brassica is also great in a salad mix.

Escarole, a type of endive is used like other greens, sauteed, or added to salads.

Rainbow Chard is typically sauteed with garlic or onions.  It can also be used in any dish replacing spinich. 

Red Kale is a favorite in soups and bean dishes.  Also, we can never keep ahead of the grandkid's appetites for kale chips.

Romaine Lettuce, the classic ingredient in Ceasar Salad has a super texture and flavor that goes well with any salad recipe.  The link below to Allrecpes.com has more than 90 salad variations featuring Romaine.
