Putting the beds to bed.
As each vegetable production area is harvested, we begin to prepare the beds for winter. Crop residue from plants that are likely to carry pathogens to the following season are removed from the field. All benign plant material and mulch is plowed and tilled into the ground to increase organic matter in the soil. Once the final tilling is complete, the area is seeded with a cover crop to reduce erosion, hold moisture, and ultimately add additional nutrients to the soil.

CSA Distribution Bin Reminder

 

As a continuing reminder, we ask that all CSA participants please remember to return their distribution bins each week. Sustainability and food safety are of supreme importance to us, and these reusable bins, which are sanitized each week, are an important part of our efforts to operate in a sustainable, responsible manner. We very much appreciate your cooperation. Thanks!
  

Kale, the gift that keeps on giving. Our efforts to provide diversity in each week's box of seasonal goods includes the inclusion of at least one leafy green vegetable if possible. Earlier in the season there was an abundance of lettuce which gave way to chard, collard greens, and ultimately kale. The kale crop has been abundant and healthy and since we have included it a number of times, we thought we would offer a tip for those that would like to save some to enjoy later this winter. Much like the freezing of peppers discussed last week, freezing kale to enjoy later in the year is a pleasantly painless process. Just like the peppers, they can be frozen raw in a pinch. However, we prefer to blanch them for a minute or so. This quick blanch deepens and enriches their color and slightly tenderizes this somewhat tough leafy green. Pat dry and freeze in a container of your choice.

Blue Potatoes
For members who are not familiar with this color variation of a favorite staple, we think you will enjoy these all-purpose delights. Similar to Yukon golds, blue potatoes have a starchiness and texture that lends itself to many uses. We find their exceptional sweetness makes them particularly well suited to making home fries. Fried alone or with onions, scallions, or leeks for added flavor they add a visual, taste, and nutrition boost to the seasonal menu.
