Why Corned Beef & Cabbage?

Contrary to popular belief, corned beef and cabbage is NOT the national dish of Ireland. So how did this dish become associated with the Irish? During the time of the great Irish immigration to the US, first generation Irish-Americans were hungry for the comforting tastes of their homeland. On St. Patrick's Day in Ireland, that meal would have been boiled bacon. But pork and bacon were too expensive for many immigrants, so they turned to the cheapest cut of meat available: beef brisket. The Irish immigrants in New York City took that brisket and then adopted a popular cooking technique of their neighbors from Eastern Europe: brining, or salt-curing meat.  The "corn" part of the recipe refers to the corn-sized salt crystals originally used in the brining process. So why the cabbage? It was one of the cheapest vegetables available.
