COOKING CLASS

Wed. Sept.3rd ~ Indigenous Flavors of Southern Mexico with Chef Colomba Aguilar at the JACC, Post Falls

Chef Colomba Aguilar of Cafe Carambola in Coeur d'Alene joins theJACC yet again to explore the indigenous flvaors of Southern Mexico. Mexico is a country divided into three regions culturally, and therefore gastronomically as well. There is the North, known for its creation and consumption of flour tortillas, the Colonial Center with its strong remnants of Spanish and French influences, and then there is El Sur, or The South. South of Mexico City, the land is vibrantly rich with the flavors of its past. In El Sur, indigenous peoples live and eat as their ancestors did hundreds of years ago, and they eat very well. On the menu: Tlayudas, Salbutes from the Yucatan, and Cactus Paddle and Tomato Soup. Class is $50 per person.
