60 Second Inspirations 
Lindsey Bartz was loving life!  
She was a senior studying architecture at the University of Michigan, she was in great shape and loved being part of the Rugby team.  But an unexpected injury sent her world into a tailspin.  Last night, we shared her story of recovery, finding a new passion and finding a way to fight even when it was impossible to walk.

Time: Registration begins at 8am, 5K at 9:30am, 1 mile walk and 5K walk at 10am, awards at 11:30am

Power of 10 Winner

Congratulations to Michelle McEwen, this month's Power of 10 Winner! Michelle stayed
consistent with her workouts and checked in more than 10 times this month. Michelle enjoys early morning workouts that keep her whole day on track. She pushes herself to get better with each workout and particularly loves the strength-based group exercise classes that the Club offers. Nice work Michelle!

HEALTHY EATS!
Tomato Lentil Soup with 
Herbs & Potato
 
This soup feels light but is filled with satisfying lentils and potatoes that really have some staying power. My recipe makes a lot, so plan on freezing portions. Make soup! It's fun and easy. Enjoy.
 
Ingredients:
32 oz. canned whole tomatoes
32 oz. beef or vegetable stock, unsalted
4 cups of water
4 small white potatoes
1 lbs. dry brown lentils, washed
3 cloves fresh garlic
1 small onion, chopped
2 TBSP olive oil
6 springs fresh sage, oregano and thyme
1 bay leaf
Salt and pepper to taste
 
Special equipment:
Large stock pot with a lid

Directions:
Rise and sort the dried lentils to remove any debris. Chop the onion, garlic and wash the herbs. Add oil to stockpot and set to medium heat. Add onion and cook for 4 minutes and then garlic. While the onion is cooking, peel and chop potatoes. Add to rinsed lentils. Open stock container, tomatoes and get ready. After the garlic has cooked for 2 minutes, dump the tomatoes and stir quickly. Add the broth, stir and then add lentils, potatoes, herbs, bay leaf and a small amount of salt and lots of black pepper.

Your soup will look like picture two at this time. Cook until it looks like picture three over low heat, covered. Check the soup and taste for salt and pepper, stir and re-taste. When satisfied, serve one and half cups of soup per person. It's always better the next day, so put it away.
