Bay Athletic Club is on fire with inspiration! In October we shared fitness transformation stories from Janet Tankersly, John Wysocki and Donnie McCrum.

Tonight we featured Eric Peterson, a father of 3, husband and owner of The Fresh Palate, a local restaurant that features fresh, healthy food.  He started life as a self-proclaimed wimpy kid who knew exercise would not only help him get stronger, but fuel him up for all the dreams he has in life.

Turkey Trot Anyone?

Healthy Recipe by Kelly!

This salad combines the elements of warmth and coolness and comes together so quickly, it is a great weeknight dinner salad. I hope you enjoy its simple and straightforward ingredients and satisfies you after a busy day. In 30 minutes or less, you can enjoy a healthy meal with a homemade (and new from me) vinaigrette.

 

Grilled Onion and Tomato Steak Salad

 

Salad Ingredients: 

-1 large sweet onion, sliced into rounds

-1 lb. lean steak (flank, hangar) or venison

-1 head of romaine lettuce

-1/3 cup of feta cheese, crumbled

-� cup of sliced cherry tomatoes

-2 TBSP oil, divided

-Salt and pepper to taste 

 

Italian Vinaigrette:

-� cup olive oil

-� cup apple cider vinegar

-2 TBSP water

-1 tsp. red pepper flakes

-1 tsp. black pepper

-1 tsp. salt

-� cup parmesan cheese, grated

-2 TBSP minced banana peppers

-1 tsp. dried rosemary 

 

Directions: 

In a small jar, add all the dressing ingredients and shake very well. Allow the flavors to meld while you prep your salad. 

 

In a large cast iron skillet, add 1 TBSP of oil and sliced onion and keep over low heat. This process to caramelize the onion can take up to 30 minutes. You can speed up the process by sprinkling a small amount of salt and water onto the onions after the first 10 minutes. When the onions are almost finished, set the cut side down of the cherry tomato into the pan and grill for 2 to 3 minutes. Remove from the pan, when they are golden brown. 

 

While the onions are cooking, chop your other ingredients and get your service bowls ready to plate. Add the last tablespoon of oil to the skillet and turn the heat up to high. Toss in the steak and allow the meat to brown on one side before flipping (use of thongs is recommended). Once you flip the steak pieces, the cooking process will only be another one to two minutes.

 

Assemble your salad by adding the onion, steak and tomato to the bowl and dress with a few drizzles of your homemade Italian vinaigrette.

Whenever you doubt how far you can go, 
remember how far you've come

This weekend Tisha Birch, mother of 4 from Presque Isle, ran her first race, with family and friends cheering her on at the finish line and from afar. She didn't start with a 5K. She dove two running shoes into a 1/2 marathon around beautiful Mackinac Island. 

Exactly two years ago, we featured Tisha for another reason. We told the story of her astounding transformation. She quit smoking after 22 years, lost 85 pounds and reclaimed her health for her family. 

Tisha's health plummeted when she gained 60 pounds during her first pregnancy. She did not take the weight off before her next. That cycle kept repeating. After the birth of her 4th child she was at her heaviest yet, 235 pounds with blood pressure so high she was at risk of having a stroke.

During her 5th pregnancy, she lost the baby in the second trimester.  Doctors could not say what caused the loss, but Tisha blamed her poor health.

She knew she needed to take control. When a friend asked her join a Corporate Fit Challenge, hosted by Bay Athletic Club,  she jumped at it. With nutrition and fitness coaching, she lost her first 8 pounds and embraced a change for life.

She continued with power walks, smaller portions and cut out soda and fast food. She became a regular in group exercise classes and fueled up with a daily Shakeology meal replacement. She lost 85 pounds, six pant sizes and lowered her blood pressure to a normal range. Tisha was most proud to become a healthy role model for her kids. 

So two years later, Tisha has stayed committed, kept the weight off and even gotten stronger. This weekend, she accomplished something amazing. She ran 13.1 miles. She showed herself that every challenge in life makes you stronger if you learn and grow from it. She proved that your body is capable of so much when take care of it.  
And most of all, she showed the power of never giving up. Congrats, friend! 
So happy to have you in my life. Your smile brightens every day!
