There is never a shortage of inspiration at Bay Athletic Club!  In September we shared fitness transformation stories from Emily Roussin, John Mack, Emma Strong and Marge Morford.

Healthy Recipe by Kelly!

In my research, I've found tons of recipes for curried egg salad...but never something as radical as apple horseradish egg salad. It's spicy, rich with a hint of onion flavor and herbs. I hope you enjoy this unique combination as much as I have. Plus, I've made it all the more healthful by substituting Greek yogurt for mayonnaise. Enjoy!

 

Apple Horseradish Egg Salad

 

Ingredients:
-6 large hard-boiled eggs, chopped

-1 medium apple, peeled and cut into 1/8-inch pieces

-1/2 cup 2% fat Greek Yogurt

-2 tablespoons scallion, thinly sliced (green section only)

-1 TBSP prepared horseradish

-1 1/2 TBSP apple cider vinegar

-1 1/2 tsp. Dijon mustard

-1/4 tsp.  Herb de Provence 

-Kosher salt and freshly ground pepper

-2 cups of spinach leaves

 

Directions:
In a small pot, cover the eggs with water and bring to a boil, uncovered. Allow to boil for two minutes, remove from heat and cover. Allow to steam for 12 minutes and immediately run under cool water and peel.

 

In a medium bowl, add the yogurt, scallion, horseradish, apple cider vinegar, Dijon Mustard, Herb de Provence and whisk together. Toss the chopped eggs and apples.  Taste and add salt and pepper to season to your preference. Allow to chill for 30 minutes to one hour. Serve on a bed of spinach and a hunk of cornbread. Serves 3.

Bay Athletic Club had the honor of being a Silver Level Business Honor Roll sponsor for Alpena Regional Medical Center's Aliferis run that races money for the Cancer Center. Many runners walked away with BAC swag and our Train to Run crew rocked the 5K!


When we heard that 20 local children were in need of sneakers for gym class we put the call out to our members to help and you stepped up!  Within a day the need was filled and we were able to help the Happy Feet program make sure all of the students had shoes for gym class!


Bay Athletic Club team members Lara Torres, Kelsey Hall, Bernie Idalski and Ami Lenning had a blast connecting with community members at the Senior Expo. Fitness is for all ages and it is never too late to start a fitness journey!

My husband Jeff and I are chairpersons of the United Way Campaign in Alpena.  My friend Sarah and I made this quick video to illustrate the need.

From Paris to Alpena...19 years later. 
 
I was out of shape, uncomfortable in my own skin and in desperate need of change. As an exchange student in France, I ate my way through "les boulangeries" and drank plenty of red wine. I loved the museums, parks and college classes at the Sorbonne University... but I was overeating and not exercising. My clothes didn't fit, so I kept buying bigger ones. I felt badly about my body. My sister came to visit and invited me on a run. I couldn't make it more than a few blocks without having to stop and walk. She was very supportive, but reality hit. 

Who knew that joining a health club back home in Madison would change my life? It did. I was so nervous to go, it was ridiculous. I did not attend the free student recreation center because I was embarrassed and clueless. At my mom's suggestion, I joined a family-owned health club off campus. I attend group fitness classes and was hooked. I thrived off the energy of the group and the motivation of the instructor. I also loved working out on my own and would hold my portable CD walkman on the stair climber for an hour! Luckily, fitness has evolved over the years and I have found many ways to be active -- from TurboKick to Combat to strength training to TRX to Pilates to SUP. 

I can honestly say that at 39 years old, I'm in far better shape, stronger, leaner and happier than my college self. No, I'm not an elite athlete, but I feel awesome and I use my love of fitness to inspire others every single day of my life! I was at the Rotary Club yesterday, and mentioned my time in France during my presentation. I look back on it with great memories of finding my voice and growing up... but it was also a low point in my health. I think it helps me as the owner of Bay Athletic Club, an elite Beachbody coach, and a passionate group fitness instructor to know what it felt like to wake up feeling lethargic and go to bed regretful of my choices that day. It's been a long time since I adopted a fit life, but it's good to look back and honor the journey.

I was successful in getting fit because I had a lot of support. My college roommate Amy helped me with meals (she's an RD and fitness coach now, aren't I lucky!), my mentors at the newspaper, Jennifer and Brian, inspired me to compete in 10K races, my mom attended classes with me and the list goes on. My friend Mandy became an instructor when I did and my career was born! I met my husband Jeff soon after I started teaching and my confidence was soaring so much higher than a year before. He was active, too, and we were a great fit! ;) I could NOT have done it alone. And neither should you! Who is YOUR support system? If you need some help, reach out. Back to basics was the theme of the BAC FUEL event in September.  The team shared how to keep nutrition simple and fun with a presentation from Precision Nutrition Coach Rick Houchin, a healthy slaw cooking demo from Kelly Lake and sampling from Chez Ami's fall soups.
