A Message From Keesha

As we move from summer to fall, the days get shorter and the air gets crisper, and I am very, very appreciative and grateful for my life. Last April one of my dear Ayurvedic teachers, Dr. Vasant Lad, did a pulse diagnosis on me and found a lump in my breast (yes that is the power of pulse diagnosis). It took me quite a while to get in and have some imaging done, but sure enough I had a lump with some vasculature feeding it. I decided to take one month to see what I could do with this for myself. First, I searched for the reason why I had it and didn't have to look very far. I immediately started doing some very intensive personal work around the emotionalcomponent to this new development in my body. In the meantime my husband began giving me Reiki treatments twice a day and I did my own Reiki treatments plus Dr. Bernie Siegel's cancer healing visualizations (birds coming and eating the cells up and carrying them away). I asked my angels what else I needed to learn from this experience and got my answers there too. A little over a month later I had an MRI, another scan, and a biopsy and everything had cleared from my breast tissue. Last week I had Pancha Karma to clear away the toxins from the radiation of all the imaging. I am now left in a state of real, in the moment appreciation and joy for being alive with the spectacular September in the Pacific Northwest that we are enjoying. I am gathering with my family members near and far and spending LOTS of time outdoors filling my tank from Pacha Mamma (Mother Earth) to get me through the rainy season that is around the corner. All things pass, sun and rain, health and illness, joy and sadness...but they come around again in that beautiful circle of life.

Hello Late Summer! Hello Shinrin-yoku!

Here in Seattle we have finally had some dry and sunny summer weather! Phew! But as time marches forward towards fall, I find myself not quite ready to come inside and surrender to darker days & rainy weather. And a-ha! Science says this is true!

 

Shinrin-yoku is the Japanese science of forest bathing. I know my parents will not believe that I haven't made this up all on my own, so I include some primary research here. In fact, the Japanese Ministry of Agriculture, Forestry and Fisheries has been describing the therapeutic health practice of being in natural places, either by "viewing" and/or by "walking" since 1982.

This study examined the effects on 280 individuals after just 15 minutes of forest viewing and forest walking vs urban viewing and urban walking:

 

"The results of studies performed on the physiological effects of Shinrin-yoku show that forest environments could lower concentrations of cortisol, lower pulse rate, lower blood pressure, increase parasympathetic nerve activity, and lower sympathetic nerve activity compared with city settings." Park, Tsunetsugu, Kasetani, Kagawa & Miyazaki, 2010

 

Other research has shown forest bathing to reduce blood glucose levels in diabetics (Ohtsuka, Yabunaka & Takayama, 1998), boost the immune system countering cancer production (Li, Morimoto & Kobayashi, 2008) and positively change a myriad of physiological markers relating to stress reduction and restoration (Lee, Park, Tsunetsugu & Yuko, 2009; Yamaguchi, Deguchi & Miyazaki, 2006). But what about not being able to get outside? And what can we do during the up-coming early winter nights? Erin Largo-Wight, a researcher from the University of North Florida has pulled together the following evidence-based recommendations to cover all scenarios. (Largo-Wight, E. (2011) Cultivating healthy places & communities: evidenced-based nature contact recommendations, Int'l Journal of Environmental Health Research; 21,1; p 41-61)

  1. Cultivate grounds for viewing
  2. Maintain healing gardens
  3. Incorporate wooded parks & green space in communities
  4. Advocate for preservation of pristine wilderness
  5. Welcome animals indoors
  6. Provide a plethora of indoor potted plants within view
  7. Light rooms with bright natural light
  8. Provide a clear view of nature outside
  9. Allow outside air and sounds in
  10. Display nature photography and realistic nature art
  11. Watch nature on TV or videos
  12. Listen to recorded sounds of nature

The best part is that it actually doesn't take much- 15 minutes is long enough to see changes in objective physiological markers and Dr Alan Logan, ND reports in the video that one day in the woods produces effects lasting days and a "couple of days" camping will produce changes for the following month. Enjoy these last beautiful days of summer! And remember to keep wilderness, green plants and fresh air woven throughout the coming fall and winter.  

How Slow is Your Food?

If you are ready to improve your health it is time to consider implementing the principles of the slow food movement.

You know you are eating slow food if you make your meals yourself from whole foods, if you know where the food came from, and even better if you know the person or family that grows it.

Slow Food is the way of slowing down and enjoying the process of preparing your food and of starting a relationship with your food before it enters your mouth.

 

Here is a simple way to fortify your diet with slow food:

 

Bone Broth

 

Many people ask me, "Erin, What are the staples in your fridge and cupboards." My answer is simple. Vegetables and fruit that are in season, fresh or dried seaweed, apple cider vinegar, a high quality coarse and fine sea salt and BONE BROTH. I usually make this broth in double batches and freeze for busy times or when I get that tickle in my throat.

 

Bone Broth, made from the bones of animals, has been consumed as a source of nourishment for humankind throughout the ages. A classic folk treatment for colds and flu, it has also been used historically for ailments that affect connective tissues such as the gastrointestinal tract, the joints, the skin, the lungs, the muscles and the blood. Broth is a valuable food and a valuable medicine.    

                                                                 

Basic Broth Making and Usage                           

Ingredients   

1. Bones-from poultry, fish, shellfish, beef, lamb*                           

* cooked remnants of a previous meal, with or without skin and meat  

* raw bones, with or without skin and meat**  

* use a whole carcass or just parts (good choices include feet, ribs, necks and knuckles) * don't forget shellfish shells, whole fish carcasses (with heads) or small dried shrimp             

  1. Water-start with cold water  (enough to just cover the bones  or 2 cups water per 1 pound bones)
  2. Vinegar-apple cider: (2 tablespoons per 1 quart water or 2 pounds bones)* lemon juice may be substituted for vinegar
  3. Vegetables (optional)-peelings and scraps like ends, tops and skins or entire vegetables (celery, carrots, onions, and parsley and a strip of Kombu)

Bone Broth Recipe                           

Combine bones, water, kombu, vegetables and vinegar in a pot. Bring to a simmer, remove any scum that has risen to the top, reduce heat and simmer (6-48 hrs for chicken, 12-72 hrs for beef).  Strain through a colander or sieve, lined with cheesecloth for a clearer broth.

 
Discard the bones. If uncooked meat was used to start with, reserve the meat for soup or salads.  


A
n easy way to cook broth is to use a Crockpot on low setting.                       

Usage         
  1. Soup  
  2. Cooking Liquid-Use broth in place of water to cook rice, beans or other grains or to steam vegetables.   
  3. Tea-Don't forget you can just add salt and sip broth like tea. This is especially nice in the winter or if you're feeling sick.
