We're not sure what happened but suddenly this week, cold weather arrived. It was a stark reminder that winter--and the holidays--is just around the corner.
 

This issue is, in large part, devoted to helping you enjoy the holiday season--it is just eight weeks away! From Christmas dinner to holiday baking classes, if you want to up the ante this season, this issue is for you.

Christmas menu now available 


We know it's only the beginning of November, but how often have you heard yourself say, "Where did the time go? It's almost Christmas and I have so much to do!"

 

You can save time and lower your stress level by simply allowing us to prepare your holiday meal or any part of it. If you'd like to cook it yourself, you have the option to buy whole or half uncooked turkeys--and we will still supply the stuffing and gravy!

Holiday kitchen tips




Holidays... a time for friends, family and food!

Many Christmas cookies can be made ahead and frozen, saving you time
No matter what you celebrate in December, the holidays are always a busy time. With visiting family and friends, there is never a shortage of things to do.

Here are a few tips to help you get through the season with a smile on your face. 
  • Your hors d'oeuvres and holiday treats don't have to be made the day they are served. Many appetizers can be frozen and either thawed or quickly heated the day you need them. (Or you can pick some up at Cuisine & Passion!)
  • Baking is another task that can be done well in advance. With cookies, for example, you can either make the dough and freeze it or bake the cookies and store them in the freezer until you need them.     
  • If you are going to bake during the hectic holiday season, make sure you have lots of baking staples on hand such as butter, vanilla extract, flour, baking soda, white and brown sugars, baking powder and yeast.
  • In professional kitchens, we always prepare our "mise en place" in advance of beginning the cooking process. This simply means getting all ingredients measured and set aside so they are available as soon as you need them. Things always go more smoothly when you are prepared.

November 6 - Holiday Hors d'oeuvres with Chef Marc

Grey Cup menu is on the way  

The Grey Cup--this nation's largest annual sporting event--is set to go November 24 in Regina and it has long been sold out. But that doesn't mean you can't pull up the large-screen TV in your living room and watch the game while enjoying snacks that are way better than any you'd find at Mosaic Stadium in Regina.

 

Once again this year, we will be featuring a Grey Cup menu of snacks and treats. Watch your inbox--we will send you a copy in the next couple of weeks.

5th Annual Holiday Magic: A passion for giving



We are all in this together      
Holiday Magic 2

 

Did you know that hundreds of families in Orléans--our friends and neighbours!--visit the food bank each month just so they have something to eat?

 

Not a day goes by that we don't count our blessings. Once again this year, we have launched our Holiday Magic program, a chance for all of us to give back to those in need.

 

For just $50, you can feed a family of four this Christmas. Chef Marc will prepare a traditional three-course turkey dinner, valued at more than $140 for each family, and the good folks at the Orléans-Cumberland Community Resource Centre will distribute the food. Last year, your generosity resulted in an additional $250 donation--on top of the Christmas dinners.

 

For your donation, your name will be placed on a festive tag that will adorn both our large sign in the store and the Christmas ornaments in the windows.

 

Our goal is to feed 20 families (80 people) this year. Won't you help?

Featured recipe: Crab fritters

Quick and easy holiday hors d'oeuvres

 

When it comes to Christmas entertaining, recipes should be quick and easy so you can spend your time with guests, not working over a hot stove.

  

These little treats can be made in advance and refrigerated. Just before serving, put them in the over at 350F for about 10 minutes and they are ready to serve.

  

Ingredients

(Makes approximately three dozen)

  

2 whole eggs   

1/2 cup milk   

1/2 to 1 cup flour       

1 cup crab meat, cleaned

1 tsp lemon grass, chopped (optional)

1 tbsp dill, chopped

1 tsp sambal oleck or chili powder    

Salt and pepper          

Canola oil for frying   

  

Method

  1. In a bowl, beat eggs and milk together.
  2. Add flour a little at a time to create a pancake-mixture texture.
  3. Add crabmeat, lemon grass, dill and sambal oleck (or chili powder). Mix well and adjust seasoning.
  4. Drop one tablespoon of the mixture into hot oil and cook until golden brown.
  5. Enjoy.
