Happy Canada Day, everyone! There is no better place to be than in Ottawa on our nation's birthday, is there?
We plan on getting in a little extra sun time ourselves this weekend. We will be closing up a bit earlier on Saturday (3:00 p.m.). In fact, we will be closing at 4:00 (an hour early) on Saturdays all summer long.
But just because we are giving our staff (and ourselves!) an extra hour off on the weekends, doesn't mean we aren't busy the rest of the time. With our prepared meals to go, changing menu every week, catering and even a few classes thrown in for good measure, we'll be hopping all summer long.

Super summer salads
During the summer, the kitchen at Cuisine & Passion is usually quiet at night once cooking classes wind up for the season.
Because of demand, however, we are presenting three classes, two on salads and one that will pair carefully selected wines with a four-course gourmet meal. Unfortunately, the wine class is already sold out but there are still a few seats available in both salad classes.
The salad classes will focus on salads as a main dish. Summer is salad season and these two classes will help you make the best of it.
July 17 -- Salads
July 31 -- Salads
August 14 -- Wine and food pairing class (SOLD OUT)
These will be the only classes offered this summer so don't wait too long to book your seat at the table.

Summertime is barbeque season so we've packed our refrigerators and freezers with great entrées and appetizers that will keep you and your guests coming back for more. House-made burgers Our burgers can be cooked from frozen--how convenient is that? They include Backyard Beef, Salmon and Dill, Veal and Blue Cheese, Turkey and Bacon and Thai Pork. Vegetarian? No problem! We have the best quinoa burgers you'll find anywhere. Marinated meats We also have an array of fresh marinated meats that you can take right to the barbeque. From Creole chicken breasts and flat-iron steaks to BBQ pork skewers, look for these selections to change regularly and often. Other frozen choices perfect for the cottage Looking for food that is easy to prepare but absolutely delicious? Try some of these other house-made frozen meals. Everything is made without preservatives. Just defrost and reheat! No "cooking" at all! - Savoury pies with house-made crust that can be cooked from frozen include Salmon and Dill, Beef, Lamb and, of course, the Classic Chicken Pie.

Fingerling potatoes are a great choice for the summer BBQ.
|
While the big potatoes are easier to peel, summer BBQs almost cry out for the little guys. And the good news? Give them a quick shower and they are ready to go--no peeling required.
The best potatoes to use for this summer BBQ are baby red skins, baby white skins or fingerling potatoes. They do not contain as much starch and are your best bet for grilling or cooking in aluminum foil.
Don't be shy when it comes to seasoning. Aside from the standard salt and pepper, try adding fresh herbs, spices and, of course, onions.

A great way to cool down

Use your imagination to create your favourite flavours.
|
What could be better than a nice bowl of ice cream on a hot summer day? Frozen yogurt! (And it's better for you, too.) The hardest part of this recipe is waiting for the yogurt to freeze. Ingredients (serves 4) 1 1/4 lbs of your favourite fruit 6 tbsp water 2 tbsp sugar 1 cup vanilla or plain yogurt Method - Make a simple syrup by putting sugar and water is a small sauce pan and heating only until the sugar melts--do not boil. Allow to cool.
- Put syrup into a blender with fruit. Blend well.
- Pour the yogurt into a bowl and add the syrup. (If you are using flavoured yogurt, use slightly less syrup.) Stir until well blended.
- Pour into a container and freeze until hard.
- Enjoy!
