Spring is for Tulipia!

Cuisine & Passion is pleased to host Tulipia, an exhibition and sale of photos by local photographer Guy Theroux. All proceeds of the sale will support the Orléans-Cumberland Community Resource Centre Food Bank.
An amateur photographer for more than 35 years, Guy's specific interest is in macro photography (extreme close-ups). For this exhibition, he will feature a series of 12 tulips. These beautiful and exclusive images can be seen at Cuisine & Passion, 2297 St. Joseph Blvd. in Orléans through the month of May starting on May 2.
Did you know that, on average, the Food Bank provides food to almost 500 people every month, 44 percent of whom are children? These are our neighbours and our friends. We hope you can join us in support of this very worthy cause.

Wine-pairing classes prove most popular
Tonight's wine-pairing class featuring the wines of New Zealand is sold out, as is the May class that will highlight Chilean wines. We do have a few spots left--a very few--for the June 21 Beer, Wine and BBQ event. Please call soon, though, because, as you can see, they fill up fast.
Regular cooking classes
We have a few regular demonstration and hands-on cooking classes left before the regular season ends in June. For those who purchased or received gift certificates at Christmas, this may be a good time to use them. Here is a list of the classes in May.

 | A natural way to lower sodium

We need salt--just not too much
Unless you've been on an extended tour of the African savannahs, you have no doubt heard that, while we need salt in our diets, it is the wise consumer who limits its intake.
The fact is, most of the salt you eat does not come from the salt shaker, it comes from the processed foods you purchase at the grocery store. It makes sense for manufacturers to use a lot of salt because it not only enhances flavour, it also extends shelf life, sometimes by simply masking "off" smells.
At Cuisine & Passion, we use only fresh, preservative-free foods with natural ingredients. If you are watching your sodium intake, this is the place to be!

Spicy salad--from the BBQ!

This salad starts
on the grill.
|
If you've been looking for an excuse to fire up the barbeque this season, wait no longer! Roll it out, fire it up and show them you can still thrill them at the grill! Admittedly, this takes a little more time to prepare than your typical chef salad. But believe me, it is well worth the effort. Ingredients (serves 4) 400 g sirloin beef or flat-iron steak, trimmed 2 French shallots, finely sliced 2 tbsp fresh mint, chopped 2 tbsp coriander, chopped Spicy sauce 1 clove garlic, smashed and chopped 2 tbsp fish sauce 1 to 2 "bird's eye" chilis 3 tbsp lime juice 1 tsp sugar Water, as needed Sliced cucumber, tomatoes and onions Mixed lettuces Method - Season the beef with salt and pepper and grill the steak until desired doneness. Let it rest for a few minutes, then slice and set aside.
- Mix the mint, coriander and shallots with the beef.
- Prepare the spicy sauce by shaking all the ingredients in jar.
- Pour the dressing over the meat and mix well.
- Place the cucumber, tomatoes and onions on the lettuce, then arrange the sliced beef on top.
- Enjoy!
