Celebrating five years in Orléans!

It's hard to believe, but as you read this, we are celebrating our fifth anniversary. Five years!

Like the owners of any small business, we planned for the worst but hoped for the best--and we weren't disappointed.

The support from our community--and from many people quite a distance from our community--has been fantastic.

Now, we are catering community events and social gatherings, preparing fresh and frozen food for our customers from all over the region and sharing everything we know at our regular corporate team-building events and cooking classes. (Who knew wine-pairing classes could be such a blast?)

To everyone who has ever graced Cuisine & Passion with their presence, we say: Thank you! We hope to see you, again, soon.

Food and wine extravaganza

"The chefs did a super job!" "The food was fantastic!" "A gourmet dinner, great wine, good friends--I can hardly wait for the next one!" "What do you mean, the next one is sold out?"

Yes, the comments and reviews were all favourable following the four-course dinner and wine-pairing event on March 22. Unfortunately--at least it is unfortunate if you planned to join us--the April 26 event featuring the wines of New Zealand is sold out, as well. But there is still a spot--yes, just one--available for the May 31 class featuring Chilean wines.

On June 21, we have a few spots left for the Beer, Wine and BBQ event. We are going to suggest you book now, though. As you can see, they fill up fast.

While we specialize in "home" catering (where we prepare the food and you pick it up and serve it yourself), we can also arrange to deliver, set up and serve your guests.

Five years and still going strong    
Expansion
Just one year after opening, the store doubled in size. 

 

In a perfect world, you sign the lease, paint the place and move in. But "perfect" was just about the opposite of what happened when we decided to open Cuisine & Passion in early 2008. 

 

Best laid plans

Shortly after starting construction, we realized we could not use the electrical panel (it was being used by a neighbour). So, we moved it, put in a new one and continued with the construction.  

 

Did we mention the floor? Channels had to be cut into the cement to accommodate the grease pit and various electrical conduits and pipes. Thankfully, it was easy and inexpensive. NOT!   

 

And the exhaust fan. When they came to install it, they asked us about the motor for it. What motor? Exactly the point. They forgot to tell us we needed to buy a motor, as well. Separately.   

 

When we signed the lease for 1,800 square feet of retail space in January 2008, little did we know that, just about a year later, we would double in size, taking over space vacated by another retailer.   

 

In May, we held an open house that was packed to the rafters. (You know, that place where they finally installed the motor for the exhaust fan?)    

 

After 20 years worked as an executive chef in some of the finest hotels in the world, this environment was certainly different. But looking back over the last five years, we wouldn't have changed a thing.

Hot or cold, main dishes or side dishes, we can provide you with everything you'll need to create your own brunch buffet.

 

On the cold side, we have items such as smoked salmon (sold by weight in the quantity you want), Bircher muesli, fruit salad, a variety of other salads and much more. As for hot choices, we have chicken, pork, fish and beef dishes; quiche (four different kinds!); home-baked beans and even omelettes (yes, omelettes!). Just heat and serve--without the fuss.

 

And don't forget our coffee cakes and small pies. We've also got house-made fruit sauce for your pancakes, waffles or French toast.

 

(Tell them you made everything yourself; you can count on us to not say a word!)

Chicken pie
Our classic Chicken Pot Pie can be cooked from frozen. 
If you love the pastry we use for our ever-popular tourtières during the Christmas season, here's some good news: You don't have to wait for the holidays. Not only do we have frozen tourtières for sale, we also have a number of other meat pies, including Lamb, Beef and Classic Chicken.

Want more? How about a beautiful Salmon, Potato and Dill Pot Pie?

Here's the easy part: They can be cooked from frozen. Simply place in an oven preheated to 375F for about an hour. Then, enjoy!

New products keep things interesting          
 

  Sweet sauces

We've been carrying a number of gluten-free products from Stonewall Kitchen for a while now. Because they have proven both popular and of excellent quality, we've expanded the number of products we carry from this supplier.   

 

These three sweet sauces--Dark Chocolate Toffee Sauce, Sauce Dulce de Leche and Spiced Rum Butterscotch Sauce--can be used on ice cream, pancakes, toast or spooned over your favourite cake or cookies. 

Savoury sauces

Looking for a nice dipping sauce or something to mix with your favourite pasta? Try our Sun-Dried Tomato Pesto, our Basil Pesto, Roasted Garlic Aioli or the Tequila Lime Cocktail Sauce. Want something a little spicier? Try our Creamy Horseradish Wasabi Sauce.

 

Whole grains for a great change

  

Looking to move up from potatoes or boring white rice? Try one of our specialty blends of whole grains. They are each sold in 32-ounce (908 g) cellophane packages.

Aztec Blend -- Featuring ancient amaranth grains that are combined with Indian Harvest's own exclusive Colusari™ Red Rice, whole-grain brown rice and multi-coloured split peas, this deliciously different side dish really livens up the menu.

Or, you could stay home and make it yourself!

This dish couldn't be easier to prepare. Sear the chicken, add a few more ingredients, cook for 30 minutes and serve. That's just about all there is to it.


Ingredients

(Serves 6-8 people)  

1.5 kg chicken thighs, boneless, skinless

2 tbsp butter

4 cloves garlic, chopped

2 tsp garam masala,

2 tsp coriander

2 tsp cumin

1/2 tsp chili powder

2 tsp paprika

1/2 cup yogurt

2 tbsp white vinegar

2 tbsp tomato paste

400 ml tomato puree

180 ml chicken stock

5 cardamom pods, bruised

1 cinnamon stick

300 ml 35% cream

                       

Method

  1. Combine, chicken, spices and yogurt in a bowl. Cover and refrigerate for three hours.
  2. Melt butter in a non-stick pan and sear the chicken on both sides. Transfer to a braising pot.
  3. Add remaining ingredients and bring to a gentle boil. Cook chicken for 30 minutes or until chicken is tender.
  4. Adjust seasoning and add chopped coriander.
  5. Enjoy!
