On January 17, Cuisine & Passion was named Small Business of the Year. We were also a finalist in the Restaurant of the Year category.

A new season of cooking classes is well underway.  

 

It's all aboard the Orient Express as we take a trip through Asia with a demonstration class on Wednesday February 6. If you prefer a more hands-on option, check out our Asian Experience classes on either February 8 or 15.

 

We can't mention cooking classes without mentioning what has easily become our most popular class each month. I'm talking, of course, about our food-and-wine pairing events. On February 22, we will be featuring food paired with wines from South Africa. With a history that goes back to the mid-1600s, South African vintners have plenty of experience perfecting great wines!

Your guide to cheese and wine pairings     
Wine and Cheese

 

It has the potential to be a match made in heaven: a glass of beautiful wine in one hand and a plate of delightful cheeses in the other. "Potential" is the operative word, because one wrong choice can ruin the experience. (For example, matching a full-bodied red wine with blue cheese will leave a rather unpleasant metallic taste in your mouth.

First, serve cheese at room temperature. This will allow you to enjoy its full range of flavours. Wines also have their preferred temperatures. Sparkling and dessert wines and most white wines should be chilled. Full-bodied white and medium-bodied red wines should be served just below room temperature, while full-bodied red wines should be served at room temperature.

 

Now, let's look at some popular cheese styles.
 
White-mold cheeses such as brie, Camembert or triple-cream go well with a chardonnay, a sparkling wine, a full-bodied red or a fortified wine (usually a wine with a spirit added).
 
Blue-vein cheeses such as Roquefort, Stilton and Gorgonzola go well with dessert wines, fortified wines (port can be included here), a Gewürztraminer or a Riesling.
 
Wash-rind or semi-soft cheeses such as Baluchon, Migneron or Oka go well with dessert wines, medium-bodied reds such as pinot noir or fortified wines. These types of cheeses also go well with a good ale or lager.
 
Cheddars such as Isles aux grues or Cru du clocher go well with full-bodied, dry white wines or full-bodied, dry red wines such as Shiraz or Bordeaux.

Orléans Wellness Expo growing every year

The crowds at the Shenkman Arts Centre for the annual Orléans Wellness Expo were pumped as the event got underway. Apparently, they were hungry, too.

 

We know because of the line-ups at the Cuisine & Passion snack bar where we made soups, salads and sandwiches available to those in attendance. The highlight of the day--quite apart from the food, of course--was an appearance by Dr. William Davis, author of the New York Times bestseller, Wheat Belly

 

A very informative--and yes, fun--day! We're already looking forward to coming back on January 11, 2014, the date of the next event. So, count us in!

Simmering soup also makes the house smell great!

Nothing tastes better on a cold night than a steaming hot bowl of soup.  

 

Normally, we would simply give you a kitchen-tested recipe that is sure to warm the soul.

 

This month, however, we thought it might be better to give you the tools you need to make up your own recipes.

 

Start by putting prepared stock in a pot. (We always carry house-made veal stock, chicken stock and vegetable, if you need it. For something different, we currently carry lamb stock, as well.)  

 

Then, just add any vegetables you might have in the refrigerator such as carrots, celery, onions, peppers or zucchini. Heat it until the vegetables reach the desired doneness and enjoy!

 

If you want to add body, throw in some noodles or rice or a dash of cream. Perhaps you might want to purée some or all of the finished product. However you prepare it, you can be sure it will be a wonderfully warm pot of pure deliciousness.
