  Three Village Cheese

Three Village Cheese Co.

is a family-run artisan cheese company, founded in 2009 with the goal of making great cheese and supporting Herkimer County's dairy farmers.

Their farmer's high quality milk, together with the creativity and hard work of their cheese makers, creates unique and exclusive cheeses. They are proud to be part of the resurgence of local food produced in the Kuyahoora Valley.

Scott has the following Three Village Cheese offerings in the Co-op Deli Department:

 

Swedish Farmer's Cheese is a nutty-sweet cheese with a texture and a flavor that falls somewhere between gouda and aged cheddar. They ripen their wheels for at least 6 months until they have the right sharpness and flavor. Try it with salami or grated onto a baked dish like scalloped potatoes.

 

Tomme is french style of cheese aged with a brushed natural rind. It is their sharpest cow's milk cheese, best enjoyed between 8 and 10 months. The rind gives it an earthy flavor reminiscent of fungi and the rustic style lets the quality of their milk shine through. Pair Tomme with a full-bodied red wine and a crusty loaf of bread.

 

Scott will be adding additional Three Village Cheeses to the Co-op's cheese shelves. If you had a favorite from the Spring Meeting tasting let Scott know your favorite.
