AN EQUAL EXCHANGE IS NO ROBBERY

Equal Exchange stands with small farmers. Since 1986 Equal Exchange Cooperative has sought to support and empower farmers and communities in Central and South America, Africa, Asia and the United States. 

EE focuses on creating supply chains by buying directly from a producing co-op. This takes out many chains of the distribution ladder and allows Equal Exchange to pay higher prices directly to the farmers.   
The fair trade premiums paid to farmers are used to ease the transition from conventional to organic growing and to purchase new high-efficiency equipment. Fair wages are used to empower women through education and to build community with bicycles.
Last week two SRFC staff- Alex and Jeremy- had the opportunity to visit the roasting facility and headquarters of EE in Massachusetts. The bustling warehouse floor was saturated with sounds and smells- worker-owners greeting one another with cheer, the hum of the roasters, and the hollow click-clack of freshly roasted beans as they filled the 5 pound bags that would, in a few days time, reach food co-ops across the country.

The quality control team guided them on a cupping, taking in aromas and tastes as well as judging the acidity, mouthfeel and aftertaste of multiple brews. A thorough group, the QC team cups every roast before packing and shipping them out. They roast and cup sample batches of lots for potential purchase, grade them for quality, and report their experiences back to the producer co-ops. 
Equal Exchange is passionate about the communities they represent and the goods they provide. They're always improving at each step of the supply chain, providing resources, education, and training for producers, worker-owners and ultimately the consumers of their goods.
 
Tahini Cookies
6 tbs tahini 
1/2 cup honey 
1/2 tsp ground cinnamon 
1/2 tsp cayenne pepper (optional) 
1 1/2 cup oats 
1/2 cup nuts/fruits (Equal Exchange almonds, cashews, raisins) 
1 handful Equal Exchange chocolate chips (optional)

In a medium bowl mix the honey, tahini and cinnamon.  
Mix in oats, fruits and nuts. Pour onto greased cookie sheet and press with a spatula until a 1 inch thick layer is achieved. Bake for 10 minutes at 350 degrees.  
Let cool for 5 minutes, then cut into 1 inch cubes and enjoy!
