Quinoa Salad with Sweet Potatoes and Peppers

Quinoa has such a nutty, mild flavor making it a natural fit for pairing with sweet vegetables and a touch of honey.

 

Ingredients:
  • 1 1/2 cups cubed sweet potato, about 9 ounces
  • 1 cup quinoa
  • 1 3/4 cups water
  • 1/2 teaspoon salt
  • 1/2 large yellow bell pepper, chopped
  • 4 large scallion, minced
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • Freshly ground black pepper to taste

Alex is also suggesting that you make a bowl of popcorn using popcorn found in our bulk section.

 

Coconut Curry Popcorn  
Heat about two tablespoons (or enough to cover the bottom of the pot) of coconut oil (on sale) in a large pot with a lid. Add one kernel of popcorn and heat on high until it pops, then remove the pan from heat. Add enough popcorn to cover the bottom of the pot (about 1/3 cup) and heat on high until the kernels slow to less than 1 pop every few seconds. Pour into a bowl, and add curry powder, nutritional yeast, melted butter, and salt to taste.

Although Southern Tier reduced this beer down to the most essential two ingredients, it is amazing how complex the flavor is. In a way it is a lot like looking into a kaleidoscope, where the simplest object suddenly becomes a transfixing multitude of images, repeating and reflecting until a whole is realized, only to see it change yet again.
