COOK SLOWLY! Hoffmann beef is raised on grass, never fed grain or corn to make it fat, so it is really lean. That is good for your heart. However, you need to add oil or butter if you want to cook it on a grill.

Don't be afraid! Just slather both sides with cooking oil. Canola works well; olive oil has a little too much flavor of it's own. Add some salt and pepper, or a rub if you like, then plop it on the grill. Quickly brown one side, then flip to brown the other side. This will seal in flavor and juices. Then TURN THE HEAT WAY DOWN. Move it far away from the flame and cook SLOWLY until it is still very rare. Take it off the heat while it is still rare, because it will continue to cook for about 5 minutes. You can eat Hoffmann steaks rare. They always do
CUT UP A ROAST FOR STEAKS
Cutting your own steaks from a roast can be more economical than buying steaks.
Using a long, non-serrated knife, cut a roast into slices about ½ to 1" thick. You can marinate overnight, or a few hours, in your favorite marinade. Slather on the vegetable oil and grill away!
Remember to sear both sides first, then cook away from the flame so you don't dry it out.

STEAKS ARE GREAT ON THE STOVE TOP, TOO!
Use a black iron skillet, slather on the oil, or butter, and season your steak with salt and pepper or a rub. Sear both sides, then put on a tight cover and turn the heat way down.
The Hoffmann's like to add onion slices, and sometimes mushrooms, right on top of the steak and in the pan. Cook until very rare, then let stand for 5 minutes. Delicious!
