The California Common, or Steam beer is a style that is uniquely American. The steam style dates to the late 1800s when the use of refrigeration was not yet widespread. It is brewed with a lager yeast strain that ferments at a higher temperature (Lagers typically ferment at very cold temperatures compared to ales).
|San Francisco From Golden Gate Bridge|To cool the beer to appropriate fermenting temperatures brewers would pump the hot wort to shallow vessels on the roof where the breeze from the Pacific would cool the liquid. When these breweries were brewing a steam would rise from the vessels over the rooftops of San Francisco. The most well known example of the style is Anchor's Steam beer, which is so popular that in the late 1990s the company trademarked the term. Now all beers must be registered as the California Common style.
The Southern Tier Brewing Company introduces the newest addition to the 2X line-up of beers, 2X Steam.

Like the others in their 2X series, 2X Steam is turned up to over 8% abv. This imperial lager has an earthy nose and tastes of lightly toasted malts with woody and earthy hops, with a subtle but firm bitterness.
