Jeremy DeChario, Brau Meister, Is Excited About Having A New Brewery To Represent At The Syracuse Real Food Co-op In 2013.
Like the majority of brewers today, Scott Vaccaro's brewing journey began humbly, with five- gallon batches of beer brewed on a kitchen stove top. However, unlike the majority of brewers, he wasn't looking for an escape from a boring job but an escape from doing his high school homework. It began as a simple twist of fate in the winter of 1995, his senior year at John Jay High School in Cross River,NY, when he went to visit a friend.

It was a fluke that inspired his brewing career. His friend's father just happened to be brewing a batch of home brew with his long-time brew partner. Scott said, "I was absolutely blown away by the idea that beer, the stuff that was the objective of many a covert mission to the local convenience store, could be brewed at home. Was it possible to dream up a flavor and then transform a few simple ingredients on the stove top into a drinkable version of that dream? I had to find out."
With the blessing of his parents and the guidance of Kenny Dorsch, his friend's father, he's been able to make that dream a reality. In November 1995, he brewed his first batch of beer, Cranberry Celebration Ale, and waited patiently as it fermented into liquid gold. Four weeks later, he opened his first bottle, and from that day on realized he was born to brew!

There were many heated debates with his parents about continuing his college schooling in accounting, but to their credit they agreed to support the decision of an eighteen-year-old to study a product he couldn't legally drink. So off to California Scott went to study Fermentation Science. After six years of study and jobs in California away from his family and friends he decided it was time to make the move back East. It wasn't easy for him to leave the Sierra Nevada Brewing Company, in Chico, California, where he started his professional career but he wanted to brew beer for the same people who had tasted his first batches of beer brewed at home on Captain Lawrence Drive in South Salem, New York. But before settling down again, he had a mission: to travel to Europe to visit the breweries that he had been reading about in books for years. After a few more brewing adventures, Scott's

goal became to create something special and to give the people of this region a brewery to call their own; to build a brewery with distinct and flavorful beers for the people to enjoy; to help promote the wonderful culture that has sprung up throughout this country as a result of new and exciting craft brewers. And he wanted to do it right here in New York. Elmsford, NY to be exact. His passion can now be our passion for his exciting beers. Even more exciting is, we now have them at the Syracuse Real Food Co-op!
