Say Yum to Broccoli!
Who is the broccoli president? You will have to read to the end of our article to find the answer! Broccoli is this month's superfood. Did you know it's part of the crucifer family which includes cabbage, cauliflower, and broccoli? This vegetable is best harvested in the cold seasons, like fall or winter. Broccoli helps your bones grow and keeps your heart healthy. It also helps prevent colon cancer and cataracts. While low in calories, broccoli is rich in essential vitamins and minerals in addition to fiber. A cup of broccoli has more vitamin C than an orange. When cooking broccoli, don't forget a boiling basket to hold your broccoli. You only need 5 minutes on top of the stove in 1 inch of boiling water. If you cook it too long, then it loses nutrition. Mrs. Bouman's students made broccoli muffins and 85 students said it was "YUMMY!" and 19 kids said it was okay. Soooo...eat broccoli because it's delicious, nutritious, AND scrumptious in muffins!

Broccoli Muffin Recipe
Because my family loves muffins, I'm always on the lookout for new variations. When I tried these nutritional muffins the first time, they were really a hit and became a favorite addition to our big family meals.
TOTAL TIME:
Prep: 15 min. Bake: 20 mins
YIELD:12 servings
Ingredients

1-3/4 cups all-purpose flour
-
1 cup quick-cooking oats
-
1/4 cup sugar
-
2 teaspoons baking powder
-
1/4 teaspoon salt
-
1 cup milk
-
1/3 cup vegetable oil
-
1 egg, lightly beaten
-
1 cup chopped fresh broccoli, blanched
-
1/2 cup shredded cheddar cheese
Directions
-
1. In a large bowl, combine flour, oats, sugar, baking powder and salt. In a small bowl, mix milk, oil and egg; stir into dry ingredients just until moistened. Fold in broccoli and cheese.

2. Spoon into greased or paper-lined muffin cups. Bake at 400° for 18-20 minutes or until top springs back when lightly touched. Yield: 1 dozen.

Survival Skills Pop-Up School - Sunday, Feb 28th
|

Unleash your child's inner primitive and sign them up for this fun and educational session of pop-up school. Children will learn how to build a fire by friction, make ropes from natural materials, identify edible plants, and make herbal medicines.
This pop-up school is sponsored by Creekside Learning Lab, with instruction provided by staff from the Riekes Center. Curriculum has been tested by Creekside students and is wildly popular.
This activity is best suited for kids in 2nd - 4th grades.

Classroom Volunteers Needed - An Hour a Week Could Change a Student's Life
Have you enjoyed volunteering in your child's classroom? Then consider visiting a classroom in east Menlo Park or East Palo Alto where there are virtually no parent volunteers. Our All Students Matter volunteers work once a week for about an hour on reading and math skills with kids in grades K-4. Sign up now to start in September. Splash into Water Polo This Spring! |

Mid Peninsula Water Polo's spring session is open for enrollment! New M-A coach Brandon Johnson is leading these age group sessions to teach kids fundamentals of the game. Emphasis is on fun and learning to play! Water polo is a great sport. Brandon is a three time All-American, played at UC Irvine and professionally in Australia and is just assuming head coach duties at Menlo-Atherton High School. Do not have to be going to M-A to join.
Age group practices: Dates: February 22 to May 8 (12 weeks) Spring Break - No Practice April 3-10 Location: M-A High School Pool Middle School ($400) Tuesday, 6:00pm to 7:30pm
