October's Superfood

Tons of Tomatoes are October's Superfood
Written by
Mrs. Bouman's Second Grade Students
Did you know that people eat 60 tons of this juicy fruit every year! They are the most popular fruit in the world. Oh yeah, we forget to tell you that many people think they are a vegetable, but we know they are a fruit because they have seeds. Americans eat almost 23 pounds of tomatoes a year. However, most of those pounds come from ketchup or tomato sauce. You can get tomatoes during any season. Tomatoes provide us with vitamins A, K, and C. They are good for your eyes, bones, teeth, and nervous system. Tomatoes are native to South America. Christopher Columbus brought tomato seeds back to Europe on one of his famous voyages.
Last week the second graders in Mrs. Wong's class made a tomato and corn salad for the students to enjoy. Some of the children were asked about the salad and 24 out of 37 students loved the recipe. One student stated, "The tomatoes are juicy"! Another student commented, "I thought it had a lot of variety of tastes"!
Here is the recipe for our Fresh Corn and Tomato Salad. We hope you will try this recipe at home!
Fresh Corn and Tomato Salad
Directions
3 tablespoons white wine vinegar
2 teaspoons kosher salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil
6 ears fresh corn, husked (about 4 cups corn kernels) - We used can corn
2 cups red or orange grape tomatoes, halved
1 bunch scallions (white and green), thinly sliced
8 ounces fresh mozzarella, cut into small cubes
1 1/2 cups fresh basil leaves
Whisk the vinegar, salt, and pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.
Shear off the corn kernels with a sharp knife over a bowl. Toss in the tomatoes, scallions, and mozzarella. Pour the vinaigrette over the salad and toss to coat. Cover and let set for 15 minutes or up to 2 hours. Before serving tear the basil over the salad and stir.
