Tis' the season for the earth's best bounty! Summertime offers the widest variety of produce, coming in all shapes, sizes, and colors. Lucky for us, that gives us alot to work with when it's too hot to turn on the oven. This summer salad is packed with nutrients, and will leave you satisfied, hydrated, and glowing with health! Red and green lettuce, like most leafy greens, provide us with vitamins A and K. Juicy peaches give us vitamin C, and walnuts provide us with Omega-3's, the healthy fats that our bodies need to absorb key vitamins A, D, E, and K. The dressing for this salad is free of any added oils, salt, and sugar. By using whole, unprocessed ingredients, we get a creamy dressing by blending walnuts, and a nice tang from lime and orange juices. This salad uses whole, unprocessed ingredients that are packed with vitamins, minerals, and fiber to keep us full. It's east to make and perfect for entertaining.   


Summer Salad with Peach Walnut Dressing

  

Ingredients: 

  • Dressing
  • 1/3 cup walnuts, toasted
  • 1/2 cup chopped peaches
  • 1/4 cup orange juice
  • 1 tablespoon lemon or lime juice
  • Salad
  • 1 head green leaf lettuce, leaves washed and torn into bite-size pieces
  • 1 head red leaf lettuce, leaves washed and torn into bite-size pieces
  • 2 peaches, halved, pitted and thinly sliced
  • 8 radishes, thinly sliced
  • 1 cucumber, halved lengthwise and thinly sliced
  • 1/2 cup walnuts, toasted

Method: 

Put all dressing ingredients in a food processor or high-powered blender and puree until smooth. Add a little water if needed to thin to a pourable consistency.
Toss salad ingredients in a large bowl. Drizzle with dressing, toss to coat well and serve immediately.

Per Serving:120 calories (70 from fat), 8g total fat, 0.5g saturated fat, 0mg cholesterol, 30mg sodium, 9g carbohydrate (3g dietary fiber, 2g sugar), 4g protein
