Every year, thousands of farmers, eaters, families and ag-tivists (among others) convene to learn, share meals, and collaborate with the common goal of advancing sustainable farming in our region and throughout the world. Lady Moon Farms
Chambersburg, PA

Lady Moon Farms is the largest grower of Certified Organic produce on the East Coast with farms located in Chambersburg, Pennsylvania, Punta Gorda, Florida, and Bainbridge, Georgia. This impressive farming operation began in 1988 with 5 tillable acres and a dream: "a dream that people can really change the world they live in!"

 

Tom and Chris Beddard, along with their two kids, moved to Chambersburg, wanting to "smell the fresh country air, see the stars fill the darkened night sky, have animals ... and more than anything else, grow food ourselves. Food that we knew was grown with love and care for the soil and earth. Food that would be free of dangerous chemicals because it never made sense to us why anyone would spray poisons on the food they would eat. Food that would allow our children to grow up strong and healthy."


"Having lived that dream", according to Tom Beddard, "I now dream of filling as many homes as I can with the same lovingly-grown food I raised my own family on." True to their mission, Lady Moon Farms now supplies countless families around the country with fresh, organic produce in all seasons, always ensuring fair labor practices and year-round employment for their workers

We order as much as we possibly can from Lady Moon Farms because we are confident that it meets our high produce standards at Harvest Market. Depending on the time of year, we receive: kale, romaine lettuce, cherry tomatoes, collard greens, beets with tops, eggplant, cilantro, parsley, cucumbers, dandelion greens, Swiss chards, and watermelon. Favorite amongst these items is the Lacinato Kale, the most prized of all kale according to our Produce Department!

Farm Fresh Recipe:
Winter Chili with Kale
Ever since Lady Moon farmer Tom Beddard's niece, Kristen, moved to France, she's been on a "Kale Crusade" to encourage the French to grow and eat more kale. The New York Times featured her mission in this article published in September, 2013. Spread the green gospel by trying your hand at this recipe!

Ingredients:
  • 2 Tablespoons coconut oil
  • 2 lbs. sirloin steaks, cut into 1 inch cubes  (2 15 oz. cans organic kidney beans for vegetarian/vegan recipe)
  • 1/2 lb. ground beef (or 2 15 oz. cans white beans for veg. recipe)
  • 12 oz. chorizo sausage, casing removed, 1/2 inch cubes
  • 1 large yellow onion, coarsely chopped
  • 1 bunch kale, chopped
  • 1/4 cup chili powder
  • 1 Tablespoon garlic salt
  • 2 teaspoons cumin
  • 1 teaspoon dried basil
  • 4 lbs. tomatoes, chopped or 2 14.5 oz. cans peeled whole tomatoes, undrained
  • 2 14.5 oz. cans beef broth or vegetable broth  
  • 1 cup chopped cilantro
  • 1 cinnamon stick
  • 3 bay leaves
  • 2 green jalapeņos, slit lengthwise 3 times
  • 1 Tablespoon organic yellow cornmeal
  • Salt and pepper
  • Grated cheddar cheese (to garnish), optional
  • Sour cream (to garnish), optional

Instructions:

 

Once you have made this dish you will never make another chili recipe. This is a great recipe and crowd pleaser. Place oil in a large heavy pot over medium heat. Brown the sirloin in batches. Remove to a bowl with slotted spoon. Add ground beef, chorizo, and onions to the pot to brown. Break up the ground beef. Return the sirloin to the pot. Stir in the remaining ingredients, except for the garnishes. Bring to a boil. Reduce heat, simmer for 2 hours. Before serving discard cinnamon stick, bay leaves and jalapeņos. Serve with grated cheese and sour cream.
