Throughout July, we'll be sampling cardamom food and drink samples, including a JEM Speciality Nut Butter Tasting on Monday, July 8 from 11am-2pm
  

Cardamom According to HerbWisdom.com, "Cardamom is a well known Indian cooking spice, and is one of the primary constituents of Garam Masala. What many people don't realize is that cardamom is also medicinal, and helps relieve digestive problems induced by garlic and onion, making it more than merely an aromatic addition to the cuisine it accompanies." Cardamom is considered one of the most valuable spices in the world due to its rich aroma and therapeutic properties, and is a good source of minerals like potassium, calcium, and magnesium. These aromatic pods are rich in many vital vitamins, including riboflavin, niacin and Vitamin C. Cardamom is farmed in only a few places in the world, including Sri Lanka, China, Laos, Nepal, Vietnam, pockets of India, and Guatemala.

For a spicy Summer Iced Tea, try this cardamom-rich recipe for Yogi Tea. This recipe is contributed by Staci Breitenbach, Harvest Market Staff Member and Yoga and Meditation Instructor at Newark's Zen Den. The health benefits of Yogi Tea are numerous and will help ease you to a better state of mind, body and soul.

Yogi Tea Recipe: Iced Tea

One Gallon of Water 
1 heaping TB Green Cardamon Pods (cracked open with a knife)
1 heaping tsp. Whole Cloves
1 heaping tsp. Whole Peppercorns
8-10 Cinnamon Sticks
Ginger Root 8" x 1" round peeled & sliced
One tea bag of Black Tea

Layer the ingredients in a reusable tea bag or muslin. Bring the gallon of water to a rolling boil with the lid on. When the water is at a rolling boil add the Yogi tea bag, place the lid back on and turn the heat to medium for 45 minutes to an hour. After the 45 minutes or one hour remove the tea bag and add one bag of black tea. Allow to steep for 5 minutes. Remove the tea bag and allow the mixture to set with the lid on for a few hours before adding milk and honey. Enjoy!

Featured Farm Recipe:  Garlic Scape Pesto
Garlic Scape Pesto
(Recipe is from Obis One's Facebook page.)

1 pound garlic scapes
2 cups Extra-Virgin Olive Oil, separated
¼ cup Romano cheese, grated
¼ cup Asiago cheese, grated
½ cup blanched slivered almonds, toasted
2 tbsp. lemon juice
2 tsp. Obis One Black Garlic Salt

Trim scapes, removing bud if desired, and cut into 2" pieces. Add 1 cup of oil and all other ingredients to a food processor and pulse for two minutes. Turn processor on high and add remaining cup of oil in a steady stream. Continue processing for 90 seconds.

Serve with pasta, as a dip or on crostini. Refrigerate up to two weeks. Freezes very well. Makes one quart.

One of the most popular Hockessin annual events is just around the corner. The relay races, holiday parade and fireworks display bring many people back to Hockessin from all over New Castle County and surrounding areas. This celebration helps our town enjoy a wonderful sense of community and goodwill, and is hosted by the Hockessin-Greenville Rotary Club and the Hockessin Business Association.

Our resident Green Smoothie Girl, Kim Lemberg, will be sampling smoothies during two Green Smoothie Demonstrations this July.  

Kim is a graduate of the Institute for Integrative Nutrition, and is a recently-published author of The Green Smoothie Girls book, a guide to getting your 7 to 10 servings of fruits and vegetables every day.

Kim will have a selection of items to assemble your own customized smoothie, or sample one of her favorite combinations. She will be highlighting simple recipes for every day use.

Falafel Salad with Tzatziki Dressing

Harvest Market is lucky to have the skills, talents and creativity of four hard-working staff who create our freshly prepared to go foods every day in the Harvest Market Kitchen. Usually rockin' a bandana, Jon Ashley is one of those fine folks who hand chop, blend, stir and craft all of our salads, soups, sides, wraps and now baked goods, all from scratch using only the finest ingredients from the store. As our Staff Pick of the month, Jon chose the baked falafel salad with tzatziki dressing. The cumin spice in the chickpea-chocked falafel is well balanced with the cool, creamy cucumber rich tzatziki sauce. Over a bed of organic leafy greens and mixed with sliced peperoncini peppers, tomatoes and cucumbers, this meal equally satisfies vegetarians and those with gluten intolerance. Instead of reaching for French fries when the desire for fried food hits, Jon savors the baked falafel and leaves the guilt of grease behind. The Harvest Market Kitchen falafel is also available as a side dish with tzatziki sauce, or in a wrap with our homemade hummus. Enjoy!

It's Essential
Lavender
Lavender essential oil can be used for many common summer ailments including sunburn, insect bites and stings, headaches and stress.  To use lavender oil for insect bites and stings, it is safe to dilute a couple drops in a carrier oil or to use straight from the bottle. After removing a bee sting, a paste of lavender, water, and baking soda can help neutralize the sting and reduce swelling (consult a medical professional if your swelling continues or worsens).
