Our resident Green Smoothie Girl, Kim Lemberg, will be sampling smoothies during our Green Smoothie Demonstration on Monday, June 3 from 12-3pm. As a Holistic Health Coach, Kim learned to appreciate the benefits of natural, wholesome foods from her Italian grandparents growing up eating local, seasonal, home-prepared Mediterranean meals. Kim is a graduate of the Institute for Integrative Nutrition, and is a recently-published author of The Green Smoothie Girls book, a guide to getting your 7 to 10 servings of fruits and vegetables every day.

Natural Dairy Products Corporation was started in 1994 by Ned MacArthur and his father Norman. Ned had quit milking cows a year earlier because of low milk prices and the frustration that there was no system by which farmers could sell milk organically.
Ned and Norman teamed up with four organic dairy farmers in Lancaster County, PA and created a whole system in which grass-fed organic milk could be produced, transported, processed and packaged, independently of the huge, volume based milk industry. Strict adherence to organic principles and a dedication to high quality were the rules, which Ned, Norman and the farmers demanded of each other.

Sour Cream Cheesecake with New England Blueberry Sauce

Cheesecake Ingredients:
- 1-1/2 C. graham cracker crumbs
- ¼ C. sugar
- 1/3 C. melted Natural By Nature organic sweet cream butter
- 24 ounces cream cheese, softened
- 1-1/2 C. sugar
- 6 eggs, room temperature
- 2 C. Natural By Nature Sour organic sour cream
- 2 T. cornstarch
- 1 T. lemon juice
- 2 t. vanilla
Preheat oven to 350 degrees. Crust- combine crumbs and ¼ C. sugar in bowl. Pour in butter and mix until all crumbs are moistened. Press mixture into 10-inch spring form pan covering bottom and sides of pan. Bake at 350 degrees for 10 minutes. Set aside to cool at least 10 minutes. Filling- Cream the cream cheese and 1-1/2 cups sugar in mixer. Add remaining ingredients and beat at medium speed for about 2-1/2 minutes, scraping bowl as needed. Pour into cooled crust.
Bake at 350 degrees for 40 minutes, rotating pan once during the cooking process, and cook for an additional 30-45 minutes until cake is set. Remove and allow cooling at least 3 1/2 hours.
Blueberry Sauce Ingredients:
- 3 C. blueberries
- ¼ C. sugar
- 2 T. lemon juice
- 2-1/2 t. organic cornstarch
Combine 2 C. blueberries, sugar and 1 T. of lemon juice in a saucepan, cook until boiling. Mix in remaining lemon juice and cornstarch together and slowly add to blueberries. Cook over medium heat until mixture is thickened. Remove from heat and add remaining C. of blueberries. Cover and chill. Spread blueberry mixture onto cheesecake and cut cake into 10-12 wedges. Top with Natural By Nature organic whipped cream for a wonderful presentation!

Tell the FDA: Cut the Carrageenan!
Click here to tell the FDA to remove Carrageenan, a common food additive linked to digestive disease and cancer, from the food supply.
Carrageenan is found in many foods, even foods labeled natural and organic. It is widely used in dairy products, frozen products, dairy alternatives, prepared poultry and cold cuts, nutritional drinks, and infant formula. For decades, scientists have conducted experiments using carrageenan and have found higher rates of gastrointestinal inflammation, colitis-like disease, and even colon cancer. Like high fructose corn syrup innocently originates from corn, carrageenan is derived from seaweed, but food companies use a degraded form of carrageenan called poligeenan.
