With the imminence of Spring this month, we at Harvest Market are gearing up and ready to grow! This year, we have a selection of heirloom seeds from Seed Savers, a non-profit seed saving organization based in Iowa. Pair those seeds with our locally-made, peat-free Organic Mechanics Seed Starter Soil (then add water +sun+time +love) and...voila! Front yard to your table. Not sure how to begin? Get inspired and informed with this helpful video from Organic Mechanics on how to plant your seeds, successfully. Later in the Spring, we'll also have vegetable, herb and flower starter plants. 
 
In the beginning of February, owner Bob Kleszics, his wife Karen Ashley, and staff Starting Local, Starting Now member Holly Tyson attended the 22nd Annual Pennsylvania Association for Sustainable Agriculture (PASAFarming for the Future Conference in State College, PA. Harvest Market is one of a small group of Lifetime Business Members of PASA, demonstrating our steadfast commitment to local, sustainable methods of growing food for our communities. 
 
We throughly endorse this year's conference theme, "Starting Fresh, Starting Local, Starting Now". We encourage you to start your quest for health by looking in the soil where nutrition begins. If you ate today, thank the soil and the farmer, too. Thank you to the many farmers and producers whose local products we are so delighted to offer to our customers.
 
Keynoter Ben Hewitt made a statement which really resonated with us, reflecting upon the "quiet activism of personal choice...". Never doubt that our consumer choice to support sustainable agriculture has tremendous power to reshape our collective landscapes (internally and externally).

Recipe for Paleo Shepherd's Pie

Shepherd's pie is a popular savory type of "pie" in the UK and Ireland. It's quite simply ground lamb with veggies, with a "pie crust" of mashed potatoes. Except in this case, the paleo version uses mashed cauliflower. No lamb? No problem. Sub in ground beef. Only catch is, you then have to call it a "cottage pie".

 

Ingredients: (6-8 servings)
  • 1.5lbs ground lamb (or beef)
  • 1 onion, chopped
  • 0.5 lbs. crimini mushrooms, peeled and coarsely chopped
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 cup chicken or beef broth
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. dried thyme
  • 1 tsp. dried oregano
  • 2 tsp. fresh rosemary (or 1 tsp. dried)
  • 1 Tbsp. Worcestershire sauce or coconut aminos (optional)
  • 2 heads cauliflower, steamed until very soft
  • 2 tbsp. olive oil (or butter or ghee)
  • coconut oil (or fat of choice)
Preparation:

1. Melt coconut oil in 2 large pans over medium heat (or can do one pan at a time).

2. Add onion, mushrooms, carrots, celery and garlic to one pan. Sauté until soft (approx. 10 minutes).

3. Add ground meat to other pan. Sautee until cooked through. (approx. 15 minutes).

4. Season ground meat with Worcestershire sauce or coconut aminos (optional), salt, pepper, thyme, oregano, and rosemary.

5. Combine meat with vegetables in medium rectangular Pyrex dish (11"x7.5").

6. Pour the broth evenly over the meat and vegetable mixture.

7. Preheat oven to 350°F.

8. In a food processor, puree the cauliflower with 2 tbsp. olive oil. Puree until the cauliflower mash is consistently smooth throughout.

9. Spread mashed cauliflower over the meat and vegetable base.

10. Bake, uncovered, for 30 minutes. Serve hot.

The Food and Drug Administration (FDA) has extended the deadline for public comments on the topic through April 26. Please take a couple of minutes to air your concerns on GE salmon by clicking here
