Ringing in the New Year 
2013 was a banner year for GrassRoots Meats, with lots of milestones achieved and successes surrounding us on all sides.  We look forward to 2014 as another year of growth on our journey to maturity, but most importantly, we are looking forward to the birth of our newest grandson due in March.  Balancing business and family can sometimes be a challenge but when it is all said and done, our proudest achievement is our family.  We pray that 2014 brings much happiness to your family as well.

New Meat Package  
We are introducing our newest meat package today, the Smart Choice Combo Package.  In this pack you will receive a variety of beef cuts: a few packages each of Top Sirloin Steak, Beef Stew/Kabob, Top Round Steak, and Bottom Round Steak; a Rump Roast; a Chuck Roast; a Brisket; Short Ribs; and 3 pounds of Ground Beef.  You will also receive the following lamb cuts: a Boneless Leg of Lamb, Sirloin Chops, Leg Steaks, Stew/Kabob, Leg Shanks, and Ground Lamb.  And to finish it all off you will receive a Whole Chicken, as well as a package each of Chicken Thighs and Boneless Breast.  A whopping total of about 37 pounds, all for the amazing price of $295.  That's a lot of meat, and a lot of value. 

Meat Recall 
You may have heard about the meat recall in Colorado affecting a number of resellers.  While we were not affected, Rocky Plains LLP out of both Dacono and Loveland, Colorado, was affected and since they sell our lamb we just wanted to assure you that the meat that was recalled was not from our processing plant.  Phil at Rocky Plains did not seem concerned about his supplier, and in fact, feels that they do a very good job and will continue to work with them.  If you have purchased meat from Rocky Plains we suggest you stop in and visit with Phil, as I am sure your support would be greatly appreciated.

New Item - Fresh Bacon! 
We haven't introduced a new item for a very long time, so this is kind of exciting.  We now have fresh Beef Bacon Slabs available.  Since they are unprocessed, you will need to cure and/or smoke them yourself, something I have been experimenting with.  There are a number of recipes on the internet, but I want to share the one I have been working on and am quite pleased with:

  • 2 quarts water
  • 1/2 cup canning salt
  • 1 can frozen condensed apple juice
  • 1 cup sugar
  • 1/4 cup molasses
  • lots of fresh ground pepper (depending on your taste)

Cut the bacon slab in half cross wise, and then into pieces about 5 to 6 inches wide, ending up with 6 meat chunks.  Place the pieces in a large bowl and soak them in the brine, in the refrigerator, for 4 days, then rinse and soak in clear water for about a half hour.   Smoke for about 6 hours at 200 degrees.  I like to use both apple and cherry wood chips for a really nice smoky flavor.   


Once complete, cool, then chill, for easier slicing.  When slicing be sure to cut across the grain of the meat for maximum tenderness.   


This bacon is actually fully cooked after smoking, so you only need to warm it up when serving.  Frying might make it kind of tough.  Also, be sure to eat the delicious fat on each piece - remember, the Omega 3's and the Conjugated Linoleic Acid are primarily in the fat of grass-finished meat.

Since we are introducing our Beef Bacon Slabs it seems like a good idea to offer them at a discounted price.  Our normal price will be $5.99 per pound, but for January you can buy them at $4.99 per pound.  The slabs are averaging about 7.5 to 9 pounds each.

And we are a little back stocked on Top Sirloin Steak, so for January we are offering 20 pounds of Top Sirloin Steak for the amazing low price of $120, which comes out to only $6.00 per pound.  As always, supplies are limited and at this price they will go fast so get your order in soon.
