Merry Christmas!  
I like this dude.  He is politically correct, but seems kind of baffled.  He says "Happy Holidays," and we say "Merry Christmas."  Guess that's the way it is.  I don't understand why a holiday that began as a celebration of the birth of Jesus is now void of his name.  Kind of reminds me of how we write "Xmas" instead of "Christmas." 

We just hope you have a wonderful holiday season with lots of good food and family fun.  May Christ be with you, and the Spirit abide in your home.  Have a very Merry Christmas!
Our 40th Anniversary  
Allan and I will be celebrating our 40th wedding anniversary on December 7th.  I know, I know, Pearl Harbor Day.  So who thinks about those kinds of things when they are young?

I can honestly say we are still best of friends after all of these years, and still in love.  OK, maybe every day is not a honeymoon, and we have had more than our share of struggles adjusting to each other over the years, but we are very happy that we stuck together and have such a wonderful life and family.
New Meat Package 
In January we will be introducing a new meat package called the Smart Choice Combo.  It will offer a very nice variety of beef, lamb, and chicken, and I think will quickly become one of our most popular packages.  Definitely something to look forward to.

Lamb and Beef Price Increases  
OK, so now for the bad news.  It has been quite awhile since we've had a major price increase, and in the meantime we have been absorbing all kinds of increases in operating costs - from lease rentals to hay to fuel, and on and on and on.  You know how it is, as I am sure with the economy the way it is you have struggled with your own budgets.

So in January we will be raising prices on the beef and the lamb.  For now chicken will stay the same, unless we experience a price increase on our end. 

While we hate to do this, we hope you will understand.  We want to be here 5 years from now, and to be sustainable we have to adjust when necessary.  We have always tried to be affordable and hopefully our meat will continue to be one of the best values available in the market today.

So if you are thinking about ordering, do it before the end of the year and take advantage of the old pricing.

Recipe for Roasts 
 
Our daughter, Lisa, cooked one of the Sirloin Butt Roasts recently and it was absolutely incredible.  Her recipe could be used on any of the roasts on special this month.

Mix rosemary, garlic (6 to 8 cloves, minced), thyme, and dried mustard with enough olive oil to liberally baste the entire roast.  Sprinkle with a bit of kosher salt, and then liberally with white pepper.  

Bake at 450 degrees for 15 minutes, then turn oven down to 325 degrees and cook till the internal temperature reaches 125 to 130 degrees.  Remove from oven and let the roast rest for about 15 minutes before slicing.

I know you will want to know how much of each of the spices to use, but Lisa cooks like her mom, instinctively, and without measuring anything.  I would suggest you do the same, based on how much you like that particular spice.  Don't think you can make a big mistake here.

I don't like being the bearer of bad news so I have not enjoyed announcing the price increases on our meat.  But I do want to say again how very grateful we are to each and every one of you - our friends and partners in our quests for wellness - for allowing us to do what we love, and to love what we are doing.  God bless you all this Christmas season.
