Greetings!

Welcome back to Thriving GFCF...my monthly update on GFCF (gluten and dairy free) products, restaurants, events, retailers and any other information I think may be of interest to you. I hope you find it informative and enriching.

It's cookie time!

I usually don't think of cookies throughout the year but when December rolls around, I pull out my vast array of GF flours. It's amazing just how many different gluten free flours one person can need. I have been on a mission for some time now to recreate my favorite holiday cookies just as I remember them from childhood but now free of gluten, dairy and, if possible, egg. Some were easier to nail then others. My pizzelles were easy to convert but sugar and spritz cookies have been a greater challenge. The Allergen-Free Baker's Handbook by Cybele Pascal has been my favorite GFCF cookbook for several years. I love her chocolate chip recipe. I recently tried the Double Choco Chunk Cookie which officially earned my "OMGoodness rating." This recipe was easy to create and passed the discerning taste test of even my "gluten eaters." I'll bring these to the upcoming Holiday Cookie Exchange. Yum!

Here's my favorite recipe for...

Chocolate Chip Cookies - Cybele Pascal's, Pg 54

 Happy GFCF baking!

 Hot Chocolate!

Another mission of mine has been to recreate something my grandmother called "cocoa gravy." It's best described as a cross between hot chocolate and pudding. I now know that it's considered drinking chocolate in other countries. It's so thick you can dip your toast into it. My grandmother used to pour it over homemade buttered biscuits. It is absolutely my favorite breakfast choice from childhood. I use one of these two hot chocolate mixes whichever I happen to have on hand. Both are a little hard to come by.

Bittersweet Cafe's Drinking Chocolate Mix
Ingredients:  Cocoa mass, cocoa butter, dutched cocoa powder, sugar, vanilla

You can mix this mix with water or any dairy free milk. I pick this up at Bittersweet Cafe in Oakland. You can also order online.

My other favorite chocolate mix...

Christopher Elbow Artisanal Drinking Chocolate

Ingredients: Dark chocolate (cacao mass, pure cane sugar, cocoa butter, soy lecithin, vanilla bean), and Vanilla Bean.

You can also mix this with water or any dairy free milk. I pick this up at CocoaBella Chocolates in Westfield Mall, San Francisco, when I'm out for my mom's day off.

Just regular old hot chocolate

Here's a recipe for just regular old fashion dairy free, sugar free hot chocolate (the not so thick variety).

2 cups of non-dairy milk (I love to use homemade almond milk for this recipe)
3-4 TBL unsweetened cocoa powder
3/4-TBL of Xylitol or 2 TBL agave or 1- 2 TBL of Maple Syrup (Grade B)
1 TBL gluten free vanilla extract

Whisk the milk, xylitol (or other sweetener) and vanilla over medium heat until hot. Enjoy!

                              Restaurant Reviews

No more gluten free pizza at CPK!

Just in case you didn't see my blog, California Pizza Kitchen has discontinued their gluten free pizza crust due to cross contamination issues. Read the full story...

Frankie, Johnnie & Luigi Too
in Dublin now has gluten free pasta and pizza crust. I visited just recently and although I did not have the greatest experience, the salad and pasta were tasty. I was disappointed that we never got to try the pizza since they messed the order up. See my blog for the complete review.

                              Retailer Updates

safeway2
The new
Safeway
on Bernal Avenue in  Pleasanton, CA, is now open but has not turned out to be the store I dreamed of. The gluten and dairy free section are a little better than most of the other Safeway stores in the area but, in my opinion, it is not any competition to Whole Foods Market. Read the full review on  my blog.

Draeger's Market at Blackhawk Square in Danville, CA
is now carrying Rudy's hamburger and hot dog buns. This is the first place I have seen them in our area. I bought a pack of hamburger buns but have not tried them yet. They are in the freezer section with the other GF frozen products. I only saw the multi-grain variety.

Product Reviews

ricemellow
Suzanne's Ricemellow Creme
I just discovered this product recently. It can be used to make rice crispy treats without having to melt any marshmallows and it's free of color dye. I was amazed to learn that marshmallows typically have blue dye in them.

Click here for a easy, dye free rice crispy recipe.

Ingredients: Brown Rice Syrup, Soy Protein, Natural Gums & Natural Flavors.

This Ricemellow creme is available at Whole Foods Market in San Ramon. I found it near the ice cream cones.

Organic Candy Canes by tru sweets

Our family loves these organic candy canes that are free of artificial flavors, color dyes, corn syrup and are vegan and gluten free. I've picked them up from both Whole Foods Market and Berkeley Bowl. $3.39 a box.

 Coming Soon...

Gluten Talk...Gluten and your health
Our own Melissa Ko will be presenting a gluten talk in January tentatively titled, "Gluten and your body. Learn how wheat can be affecting your family's health and behavior." It's currently planned for Thursday, January 26, 2012, 7:00pm at Child Care Links in Pleasanton. There will be multiple gluten free vendors there with free samples.  Please pass along the word and watch for the Evite!
