Italian Lasagna Soup

Serve this yummy soup with crusty bread and a garden salad!


 

Ingredients

  • 2 teaspoons olive oil

  • 1 1/2 lb. ground Italian sausage

  • 2 cups chopped onion

  • 4 cloves garlic chopped

  • 2 teaspoons oregano

  • 1/2 teaspoons crushed red pepper flakes

  • 2 Tablespoons tomato paste

  • 1 28 oz. can fire roasted diced tomatoes

  • 2 bay leaves

  • 6 cups chicken stock

  • 8 oz. lasagna noodles

  • Salt and pepper to taste


 

Cheesy Goodness! Combined all ingredients and put to the side

  • 8 oz. ricotta cheese

  • 1/2 cup fresh Parmesan grated

  • 1/2 teaspoon salt

  • 2 cups fresh mozzarella 

Directions

  1. Brown sausage in oil in the bottom of stock pot, add onion and garlic.

  2. After meat is brown add all other ingredients except the pasta.

  3. Bring soup to a boil then reduce to low for 30 min. Break lasagna noodles into pieces and cook  according to directions just to al dente.

  4. After soup boils remove bay leaves and add lasagna noodles just before serving. (Soup can simmer for much longer or even cook on low in a crock pot but you must add noodles last minute or they will be mushy)

  5. After stirring in noodles turn pot off or turn to the lowest temperature just to keep warm but not to continue cooking. 

  6. Spoon 2 Tablespoons of Cheesy Goodness mixture into the bottom of each bowl then ladle soup on top of cheese.

 

There is No Place Like Home

Spring. The season that conjures up thoughts of daffodils, butterflies, and cleaning - spring cleaning that is. After our homes have been tightly closed for the long cold winter months, it is finally time to open the windows for a breath of fresh air. Ok, it is only March; perhaps we are only opening them metaphorically since it is still cold most days, but it still a time to "freshen" our homes by clearing out the clutter.

Recently, I read an article on social media that challenged the readers to clear out 40 bags of clutter in 40 days. Several of my girlfriends have taken this challenge on and were surprised how easy and doable the task has been. One day, it was a kitchen cabinet. The next day was the top of refrigerator. Before they knew it the entire kitchen was clutter free!

 

There is something about having a finite goal that makes the de-cluttering task less overwhelming than walking into to a room and realizing the mess is too big to complete in an hour, a day, or perhaps even a week. Messy build-up did not happen overnight and will usually take more than a day to set it right.

 

Therefore, divide the job into manageable tasks with milestones along the way, and don't forget to set a time limit. Not only does this help us to stay focused on the cleaning but will help us to make wise use of our time. Attempting to tackle big jobs in single time span leaves us frustrated and wanting to give up. However, tackling smaller tasks during multiple time periods is more realistic and is a wise use of time.

 

In Ephesians 5:15-16, it states, "Therefore be careful how you walk, not as unwise men but as wise, making the most of your time because the days are evil."

 

Time has a way of getting away from us, if we are not intentional. Whether you take the 40 bag challenge or develop your own cleaning challenge, make a plan that makes the most of your time and before you know it your home will be spring fresh.

Home At Last

 

Many of you knew Eleanor as a great Bible Teacher through The Amazing Collection, Be Amazing and Invincible Love/Invisible War. She was a picture of grace, style and beauty. I would like to share with you why we at Big Dream Ministries loved her so much.

 

In December 2000, I made a phone call to Eleanor that would change both of our lives. I had a "big dream" and I wanted Eleanor to be a part of it. I asked her to pray about being one of the teachers for a video series that would present every book in the Bible. Her answer was so wonderful and encouraging...She said "No I will not pray about it...I already have been praying that God would allow me to reach more women with the Word of God. This is His answer...count me in!"

 

And that began an adventure that we started together along with Linda Sweeney, Margie Reuther, Robin Rosebrough and many other wonderful women who have walked this road with us. Eleanor was indeed all in.

 

Eleanor was one of a kind. Linda likes to say we are uniquely made to be uniquely used...and that was Eleanor and oh, did God use her!!!!

First Eleanor was highly goal oriented.She kept her eye on the goal and that was to bring glory to God. She believed that Christ could come back at any moment so she worked tirelessly for His kingdom. She would often comment on how life was short and time was fast and there was much to be accomplished...and accomplish much she did.

 

She was frugal with money. She cut and colored her own hair. She seldom ate out or went to plays or movies. She chose to be frugal with herself so she could be lavishly generous with others. She thought nothing of writing large checks to a church, a ministry or a person in need. She invested in eternity.

 

Eleanor was a perfectionist. She spent hours shaping her Bible lessons. She saw her work as unto the Lord and she wanted to give Him her best.

 

Eleanor was a prayer warrior. That title goes to only a few. You could always count on Eleanor to pray. She wouldn't just say she would pray...she would really do it. Her desire was to go to heaven and take as many people with her as she could. So she prayed...prayer was a simply a part of life. Jesus was near and He cared and she had easy access to Him.

 

Eleanor was a strong willed, determined leader. Yet because of her love for Christ she chose to be a follower at Big Dream and she served with humility and passion for fourteen years. For me, she was totally dependable. She never whined or complained. She worked incredibly hard and gave her all to the ministry.

 

On Tuesday morning, February 24, 2015 Eleanor Lewis went from a peaceful sleep to wide away in the presence of the Lord. On earth she was driven towards the goal...in heaven she rests with the Savior who is the goal. On earth she was frugal with herself and in heaven she now has all of the riches of the inheritance of the saints. On earth she was often frustrated because she could not reach perfection. Today she is perfect. All that she lived for these last 47 years have now become a reality and Eleanor Lewis IS HOME at last. 

 


 


 

 

 

15-Minute Bible Study
The Book of Daniel

"The Amazing Collection"

 

Daniel and his three friends were some of the best and brightest young men of Jerusalem taken into captivity in Babylon in 586 BC. The three friends so desired to obey the true God they refused to bow down to Nebuchadnezzar's image and were thrown into the fiery furnace. The king looked in and said, we threw three bound men in but he saw four men loosed walking in the fire without harm, and the fourth was like a son of the gods. Daniel's friends came out of the fiery furnace alive! Their hair was not singed, their clothes were not damaged, and they did not even smell of smoke. (Daniel 3:24-27b) Have you ever been in a fiery trial feeling bound and helpless? Even in the fire these young men were loosed and not alone because Jesus, the son of God, was with them!

 

Daniel, obeying God's first commandment, refused to petition Darius instead of God and for that obedience he was thrown into the lion's den. Sometimes obedience seems to result in difficulty but every time God provided.   Daniel said, "My God sent His angel and shut the lions' mouths and they have not harmed me..."   Just as the fire had no effect on his three friends, the lions did not harm Daniel. However, when the king cast those who accused Daniel into the den, they were crushed by the lions before they even reached bottom! (Daniel 6:20-24)  

 

The lesson is: trusting the Sovereign God brings God's protection.

 

Have you ever had a dream so frightening you could not get back to sleep for fear the dream would return? In addition to the lions den and fears of being taken from home to a strange land, Daniel had scary dreams and night visions. God showed Daniel future events including a frightening world ruler who will "wage war with the saints and overpower them...(and) speak monstrous things against the God of gods" (Daniel 7:21, 11:36)   We must trust that even in difficult times when the world speaks against God and us, the same sovereign God who protected Daniel and his friends has promised to protect us.
