Decadent Dinner

An exquisite wine, beer + chocolate pairing experience.

In celebration of all things chocolate and trains and to kick off the 2014 Great Chocolate Festival, you're invited to join us for four exceptionally creative courses of contemporary cuisine prepared by Chef Charles Wilburn of the Poolville Country StoreThese will be perfectly paired with two wines from Owera Vineyards in Cazenovia and two beers brewed by Good Nature Brewing in Hamilton, including an imperial chocolate stout. (Yum!)

Madison County Historian, Matthew Urtz, will present Madison County Wrecked: Train derailments, crashes and crazy stories from the Madison County Rails. Urtz will showcase some of the most famous railroad crashes and stories through photos and newspaper accounts. 
Wrecks ranging from 1866 to 2008 will be featured. His presentation promises to be entertaining, amusing and insightful.

Cacao, Tomato & Chili Raviolo
handmade coca pasta, filled with feta cheese, mushrooms, spinach, chilis and cacao nibs finished with tomato rustico and cacao oil 

Arugula + Citrus Salad with a 
White Chocolate Vinaigrette

freshly harvested arugula, citrus supremes, cashews, diced tomatoes and red onion tossed in a soothing white chocolate dressing 

Cacao Nib + Espresso Crusted Filet of Beef
hand cut filet of Beef crusted with crushed cacao nibs and espresso powder, seared medium-rare with sautéed greens, shoestring potatoes and a chocolate-port wine sauce 

Frozen Chocolate Terrine with Raspberry Sauce
this is an incredibly decadent terrine of chocolate, butter, egg and cream, frozen then frosted with bittersweet chocolate ganache and served in a pool of raspberry sauce (not for the calorie counter)
