Recipe of the Month
Poppy Seed Chicken Salad
  
Ingredients
2 cups cooked chicken, cubed
1/4 cup Greek yogurt, unflavored (may substitue more mayo)
1/2 cup mayonnaise
1 to 2 tablespoon of poppy seeds
1/4 cup celery, finely chopped
1/2 cup toasted or roasted pecans
1/2 cup halved seedless green or red grapes
1 teaspoon lemon juice
Pinch of sugar
Salt to taste

 

 
Instructions
Combine all ingredients in a bowl and stir together.
Cover and chill in refrigerator until ready to serve.
Serve with crackers or pita chips. 
 
Variations
Go tropical and substitute chopped pineapple for the grapes and macadamia nuts for the pecans.  Stir in about 1/2 cup coconut for the more island flavor.
