HOLIDAY ENTERTAINING 

 

The Holidays are just around the corner.  Are you ready?

 

We at Sable & Rosenfeld have been busy developing new recipes that are deliciously easy and perfect for all your Holiday Entertaining needs!
 

Olives are more than just drink garnishes.   Their natural salty and tart characteristics add just the right flavor to main course dishes that will tantalize your guests.  Try a few of our suggestions and enjoy your holidays to the fullest!  

 

Chorizo and Green Olive Stuffing

  

Ingredients:
 

14 cups crusty bread, cut into
    1/2 inch cubes

8 tablespoons unsalted butter

8 ounces chorizo, diced

1/4 teaspoon smoked paprika

1 sprig rosemary

 2 cups onion, diced fine

6 cloves garlic, minced

2 cups Sable & Rosenfeld Tipsy
    Vermouth Olives
, chopped fine

4 cups chicken or turkey stock

Pinch saffron

1 tablespoon raw (Turbinado) sugar (to taste)

 




Preparation:

Preheat oven to 275°F. Arrange bread cubes on a baking sheet and bake until completely dried, about 45 minutes, then transfer to a large bowl. Increase oven temperature to 350°F.

 

Heat a large skillet on medium heat. Add butter and chorizo, and cook until sausage is crisp and fat is reddish/orange. Stir in paprika, rosemary, and onions, then cook until onions turn translucent. Stir in garlic and olives and cook for one minute until fragrant.

 

Add stock and saffron. Stir to combine, then bring mixture to a simmer. Let cook for five minutes at a bare simmer for flavors to meld. Add salt and sugar as needed. Remove rosemary.

 

Pour broth mixture over bread cubes in mixing bowl and toss with a spatula until well combined. Transfer mixture to a 9 by 13 baking dish, lightly distributing evenly; do not pack down. Bake for 30 minutes or until top is well browned but center is still moist.

 

Serves 8 to 10. 

 

Roasted Olive Stuffed Pork Loin

  

Ingredients:
 

3 pounds boneless pork loin

1 cup Italian salad dressing

1 (16 ounce) jar Sable &
    Rosenfeld  Spicy Olive  

    Bruschetta, drained 

Cracked black pepper to taste


Preparation:

Place pork in a shallow dish and coat with Italian dressing.  

Cover and refrigerate for two hours.

 

When pork has finished marinating, preheat oven to 300 degrees F (150 degrees C).

 

Slice the pork loin down the center lengthwise, cutting about 3/4 of the way through to the other side. Stuff full with the olive bruschetta. Cover and bake in the preheated oven for about 2 hours, or until internal temperature has reached 145 degrees F (63 degrees C).


Makes 8 servings.

 

Mediterranean Baked Salmon

 

Ingredients:
 

4 (6-8 ounce) salmon filets 

1 (16 ounce) jar Sable &
    Rosenfeld Mediterranean
    Olive Bruschetta  

salt and pepper to taste

Olive Bruschetta Topping
Preparation:

Preheat the oven to 450 degrees F.

 

Place salmon, skin side down, on a non-stick baking sheet.  Top each filet with ¼ cup bruschetta.   Bake until salmon is cooked through, about 12 to 15 minutes.

 

Makes 4 servings.
