HARVEST CELEBRATIONS WITH SABLE & ROSENFELD

 

The harvest months are a special time to honor and celebrate the bounty of the earth and all its blessings. We at Sable & Rosenfeld enjoy the many opportunities for these celebrations ~ Thanksgiving Day in Canada, Monday, October 14th and Thanksgiving Day in the United States, Thursday, November 28th. Happy Harvest to all!
 

 
AUTUMN TREATS

For any Fall gathering may we suggest the following starters:


The Manhattan
(Perfect autumn hues)

Ingredients:
 
2 oz Whiskey
1 oz Sweet Vermouth
dash of Bitters
1 Sable & Rosenfeld Whiskey Tipsy Cherry 

Preparation:

In an old-fashioned glass with ice combine Whiskey, Vermouth and Bitters. Stir and garnish with a Whiskey Tipsy Cherry.
 

 
Mushroom Tartlets

Ingredients:
 
 1 tablespoon extra-virgin
olive oil
1 large shallot, diced small
1 pound cremini mushrooms, sliced
Coarse salt and ground pepper
2 teaspoons fresh thyme leaves, plus more for serving
¾ cup grated Gruyere cheese
(2 ounces)  
Sable & Rosenfeld Party Cups 
 




Preparation:


Preheat oven to 375 degrees. Place Sable & Rosenfeld Party Cups on baking sheet.

In a large skillet, heat oil over medium-high. Add shallot and cook, stirring, until soft, 3 minutes. Add mushrooms and cook, stirring, until soft and browned, 10 minutes. Season with salt and pepper. Stir in thyme and remove skillet from heat.   

 

Divide mushroom mixture and cheese among cups. Bake approximately 10 minutes. Sprinkle with more thyme. Serve warm.

Makes approximately 24 tartlets.

 


Or, the following finale:


Apple Cups

Ingredients:
 
 1/4 cup unsalted butter
3 Braeburn apples, peeled, cored and diced
3 Gold Delicious apples, peeled, cored and diced
1/2 cup sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 tablespoon all-purpose flour
Sable & Rosenfeld Party Cups 
 





Preparation:


In a large saucepan, melt butter over medium heat. Add applies, sugar, cinnamon, nutmeg and cloves. Cook, stirring often, until apples are tender, approximately 5 minutes. Add flour, stirring until thickened. Remove from heat and let cool for 15 minutes.

Preheat oven to 375 degrees.

Place 40 party cups on a baking sheet. Spoon apple mixture into cups. Bake until golden brown, approximately 6 minutes. Let cool for 5 minutes before removing from pan.

Makes 40 servings.

HALLOWEEN TRICKS

Surprise your guests with our ghoulish ideas:


The Fiery Devil Cocktail 

   

Ingredients:
  
2 oz Tequila Bianco
1 oz Cointreau
1 oz lime juice
1 oz orange juice
½ oz Sprite
½ oz Sable & Rosenfeld Fiery Olives brine
2 Sable & Rosenfeld Fiery Olives

 
Preparation:

To a cocktail shaker filled with ice, add Tequila Bianco, Cointreau, lime juice, orange juice, Sprite and Fiery Olives brine.  Shake and strain into a martini glass and garnish with 2 Fiery Olives.
 

 

Bat Wings 
(Better known as Jerk Wings)
 
 

   

Preparation:
Marinate chicken wings in Tipsy Jerk Sauce for at least 1-1/2 hours.
Drain. Bake at 400° for 45 minutes.
