Our Cheese Of The Month Is  Raclette From Switzerland
Raclette is more than just a cheese, it is a Swiss staple that represents a fun, authentic and friendly way of dining.
The name Raclette comes from the French 'racler' or 'to scrape' because the savory melted wheel of cheese was traditionally heated over an open fire before being poured over an accompanying dish of potatoes.

An authentic and natural product, Swiss raclette cheese is still manufactured in accordance with the original recipe. Produced from creamy cow's milk, raclette's incomparable flavor is due to the rich flora of the lush, Swiss countryside. A full-bodied savory cheese, raclette is usually eaten hot, but can also be enjoyed in cold slices. Whatever your preference, this cheese makes for a wonderfully authentic family meal or dinner with friends.

We Recommend a Dry Riesling to Pair with Raclette
Leitz, 2013 Rheingau Riesling Trocken

The Rhine River flows west for a brief twenty miles on its way toward the North Sea near the cities of Mainz and Wiesbaden in Germany. The steeply-sloped region is known as the Rheingau, and one of its stars is Johanne Leitz. Since 1985 he has grown his family's vineyards from 6 to about 100 acres and makes highly prized estate wines. His Eins, Zwei Dry Rheingau Riesling Trocken (trocken means dry) is made from a blend of local fruit and is a terrific addition to dinner. Aromas and flavors hinting of apple, apricot, and lime blossom blend nicely into this crisp, refreshing and dry wine.
