Bartlett Pear and Gorgonzola Bruschetta Recipe

Ingredients: 

          • 12 baguette slices
          • 4 oz mild, creamy Gorgonzola at room temperature
          • 2 ripe Bartlett pears, halved, cored, and peeled
          • Fresh ground pepper

Instructions:  

 

1. Preheat oven to 400F.

2. Place the baguette slices on a non-stick or ungreased baking sheet. Toast until lightly golden, about 10 minutes.
Remove and set aside. Spread each piece of toast with a thin layer of Gorgonzola.

3. Slice the pears and then top each of the toasts with them and return to the baking sheet.

4. Place the baking sheet under the broiler for 2 or 3 minutes, just long enough to melt the cheese and warm the pears. Garnish with fresh ground pepper.

Bartlett Pear SliceThe Bartlett is usually picked green and has to be allowed to ripen to a soft yellow color. The best way to do this is to leave the pear on your kitchen counter for a few days until it starts to soften and turn yellow. If you push gently on the top of the pear by the stem and it gives just a little to the pressure then it is ready to eat. To store pears just put them in the refrigerator. They should hold for about a week. If you like them a little crunchy put them in the refrigerator before they become soft.
