Join the Lupus Foundation of Minnesota (LFM) for our Third Annual Lupus Walk for Hope and 5K Run - Duluth.

LFM has a 35+ year history of funding lupus research and a portion of event proceeds will also fund services provided to lupus patients throughout Minnesota and beyond. LFM works to improve the quality of life for people affected by lupus through support groups, trainings, education, and resource referrals.

Belle Plaine Half Marathon, 5K & Kids Fun Run

The Minnesota River Valley Scenic Byway Half Marathon, 5K, & Kid's Fun Run will be held in Belle Plaine on Saturday, October 12th at Court Square Park.  Proceeds from this event benefit the Belle Plaine Business Community and the MN River Valley Clean-Up Project.
  
Last year about 500 people participated in the Half Marathon and 5K, enjoying the breathtaking Autumn foliage along our beautiful river valley trail. 

 

The Kid's Fun Run is scheduled to begin at 8:45. The Half Marathon is scheduled to begin at 9 a.m., followed by the 5K at 9:20 a.m. Registration forms are available online at belleplainefestivals.org or at the Chamber/Festivals & Events office. The fun will continue, at Court Square Park, after the race with food, entertainment, craft show, and kid-friendly activities, so bring the whole family!

The Q. Cumber's Fall Harvest 5k is set in our backyard.  Centennial Lakes has provided a beautiful backdrop for the restaurant for 23 years.  Now it's a lovely place for a morning run. 

9:00 is the start time for the kids one-mile fun run.  Then the 5k starts at 9:30.  All runners receive long-sleeved tech shirts for participating.  The best part of the day is after the race when we invite all the runners to come upstairs and enjoy Sunday brunch, also included in the registration fee. Registration is $35 ($25 for kids). We hope to see you there!!

Fun, family-friendly, flat, and fast: the Boo Run Run is a great first race and one to come back to year after year.  Join Community NHS to kick off Halloween with a costume contest, kids' race, and community celebration that culminates with our 5K run/walk. 

 

Prizes are awarded for the top three male and female finishers, and for best male, female, and group costumes for adults, plus top three children's costumes.  We'll have a head start on Halloween candy, mascots, fire trucks and police horses

 

Registration for the Kids' Race is free, and kids' t-shirts are available for $10.  Pre-registration is strongly encouraged.  5K registration is $30 in advance or $35 on race day.

Pumpkin Seeds 

 

When it's time to carve your Halloween pumpkin, save the seeds to savor! For added flavor, toast shelled seeds in a dry skillet for about 5 minutes over medium heat, stirring (almost) constantly. Watch carefully so they don't burn! Or, roast the shelled seeds in your oven at 325°F for about 20 to 25 minutes. Although pumpkin seeds make a great, fun snack, they have a lot more versatility.

 

Here are some fun and unique ways you can add pumpkin seeds to your menu:

 

·       Roast them.

·       Add them to hot or cold cereal or granola.

·       Add them to trail mix.

·       Eat them sprinkled over hummus.

·       Add them to cookies, cakes, quick breads and muffins.

·       Garnish ice cream, yogurt, fresh fruit salads or non-dairy desserts.

·       Incredibly yummy as a garnish on dark chocolate cake or added to decadent brownies.

·       Cook whole grain pasta; toss with olive oil, garlic, your favorite cheese and roasted pumpkin seeds.

·       Garnish salads with roasted pumpkin seeds.

·       Garnish grain and legume dishes and salads.

·       Slow-roast winter squash with pumpkin seeds for a truly Native American feast!

·       Stir them into yogurt, cottage cheese, softened cream cheese or ricotta cheese.

·       Grind and use for specialty sauces such as Mole.

·       Garnish roasted root vegetables, steamed vegetables or sautéed vegetables.

·       Garnish stew, chili or soups such as corn, pumpkin, butternut squash or vegetable.

·       Add them to pancakes and waffles.

·       Grind them up and make pumpkin seed butter for a great bread or bagel spread.

 

Be sure to store pumpkin seeds in the refrigerator in an air-tight container. They will keep for up to six months, and in the freezer for up to a year. Toasted or roasted seeds should always be kept cold as the oils are more susceptible to rancidity once cooked. If not refrigerated, keep them air-tight and use them within six to eight weeks of purchasing. Got a recipe or fun idea for pumpkin seeds? I'd love to know!

SPICY TAMARI PUMPKIN SEEDS

 

This addictive snack is spiked with spicy cayenne, savory tamari and brown sugar.

 

Ingredients:

 

·       Ingredients: 

·       1 tablespoon olive or canola oil

·       1 pound shelled pumpkin seeds

·       1/2 teaspoon cayenne pepper

·       4 teaspoons reduced-sodium tamari sauce

·       1 teaspoon evaporated cane or natural brown sugar (optional)

 

Method:

 

Method: 

Heat oil in a large nonstick pan over medium heat. Add pumpkin seeds and sauté for 2 to 3 minutes until they start to pop and turn golden brown. Add cayenne, tamari and sugar. Continue to sauté for another minute or so, until seeds are coated, glossy and golden brown. Transfer to a sheet tray, carefully spread out in a single layer and set aside to let cool before serving. Serves 8 to 10.
