The fourth annual Scholarship 5K presented by the McKeen family and organized by Eastview's National Honor Society is scheduled for Saturday, July 13th, with the Kids Fun Run starting at 8:00 a.m. and the 5K beginning at 8:15 a.m.

 

NHS Scholarship 5K The event is at Eastview High School in Apple Valley, Minnesota. The course will start and finish near the Eastview stadium and the course meanders through the nearby Cedar Isle neighborhood.

 

We have new, performance t-shirts this year made by New Balance which are available in mens and womens styles.

 

This event is for EVERYBODY!!! It's not about the race - it's about community! We offer a challenging course for the serious athlete but we also have a great community environment for people who just want to walk the course and chat with their friends/neighbors.

The 8th annual MOST Amazing Race will take place on July 20, 2013 and is an official event of the Minneapolis Aquatennial. Patterned after the CBS show "The Amazing Race," this scavenger-hunt-like-race leads qualifying teams of two on a large-scale race around Minneapolis and St. Paul.  This fundraising event benefits The Salvation Army's Bed and Bread Club®, which helps alleviate hunger and homelessness in the Twin Cities. The 30th Annual Highland Fest weekend will again feature our very popular 5K Walk/Run, on Saturday, July 20th, and registration is still open. Under what we just know will be blue skies and perfectly warm temperatures, our runners will enjoy the same route as past years, along the scenic Mississippi River Blvd in St Paul. We truly appreciate our partnership with Health Partners this year, who's staff will help volunteer at the race. Conveniently located just south of Ford Pkwy on Mississippi River Blvd along the Mississippi River, our Start/Finish lines will be easy to spot, and easy to get to; Ford Motor Company is allowing us to have our participants park in their lot, despite ongoing demolition at the plant. You will receive your race bag when you check in for the event at the registration tables and treats and goodie will be handed out at the end of the race. Runners are encouraged to head directly back up Ford Pkwy to enjoy the entertainment, food, Art Fair, Business Fair, Home Expo and other fun activities that make up Highland Fest.

THE MN MAJOR HITS THE ROAD FOR MAJOR GOOD

MN Major collage The MN Major River to River Ride is a one-day cycling event to raise money and awareness for St. Jude Children's Research Hospital. Founded by Motocross Champion Ryan Dungey in 2012, all registration fees and money raised benefits St. Jude Children's Hospital-giving the ride impact well beyond the rolling hills of the course. 

 

The MN Major is happening on July 28th, beginning and ending at the Afton Apple Orchard in Hastings, MN, and offers

something for every skill level. The Major ride is 100K (62 miles), while the Minor ride pulls up at 32K (20 miles). MN Major 2

 

The spirit of the MN Major comes from its founder, Ryan Dungey. Ryan lost his grandmother to cancer in 2005 and has since dedicated his Motocross career and much of his charity work to helping find a cure. It's this drive and compassion he has brought to the event and he hopes to share in the excitement with the public. MN Major 2

The Pine Tree Apple Tennis Classic (PTATC) is an annual mixed doubles charity tennis tournament that raises funds for the cancer research program of Children's Hospitals and Clinics of Minnesota. In 27 years, over $4.2 million has been raised. The funds from the PTATC support many research projects that explore how to treat cancer and ensure the best overall long-term outcome for patients.

So do like we do when you're out and about this summer; sail past those fast food traps and enjoy the best that summer offers in the way of easy meals and seasonal summer snacks to keep you eating well, no matter how far you are from home.

 

The Secret Ingredient: Preparation

 

When it comes to preparing summer picnics, road food or beach snacks keep two words in mind: simple and good. Keeping things easy and using the best ingredients are key to making any recipe to take on-the-go. And with summer fruits and vegetables juicy, fragrant and bountiful, we couldn't ask for anything more.

 

So first things first: Just like when you're cooking at home, a little common sense planning before you head out the door helps ensure stress-free dining on down the road. Think ahead about where and when hunger will strike.

 

Hitting the road? Pack healthy snacks. Make sure at least some of them don't need to be in the cooler to avoid frequent opening and closing. Pack refreshing drinks and cold water, too.

 

Going camping or to the beach where you can cook out? Pre-marinate fish, chicken or tempeh to cook on your first night out. Pack frozen items to thaw for the second night, or bring canned goods that open and heat up easily.

 

Consider trying out new recipes at home first to make sure you like the dish before packing it along on a trip. The road's no place to find out you don't like that pasta salad.

 

Transporting food in summer heat and consuming it outdoors has its own set of hazards. Not to worry, however. Pack lots of ice and cold packs and check on cold food often to make sure it's in good shape.

QUINOA SALAD WITH CHICKEN, GRAPES AND ALMONDS

Using the meat from a rotisserie chicken is a convenient shortcut for making this tempting main course salad. Serve over lettuce and chopped fresh veggies for lunch, dinner or picnics.

Ingredients:

·       2 cups water

·       1 1/3 cup quinoa

·       Salt and pepper, to taste

·       2 tablespoons white wine vinegar

·       2 tablespoons olive oil

·       2 cups shredded cooked chicken

·       1 1/2 cup green or red grapes, quartered

·       1/2 cup sliced almonds, toasted

 

Method:

Method: 

Rinse quinoa under cold running water and drain. Bring 2 cups water to a boil. Stir in quinoa and a pinch of salt then reduce heat, cover and simmer until tender and most of the liquid is absorbed,15 to 20 minutes. Uncover and set aside to let cool.

In a large bowl, whisk together vinegar, salt and pepper. Slowly add the oil, whisking well. Add quinoa and toss to combine. Add chicken, grapes and almonds and toss again. Serve at room temperature or chilled, if you like. Serves 4 to 6.

Pearson's Pearson Candy Company was founded in 1909 by P. Edward Pearson with the assistance of his two brothers John Albert and Oscar F. Pearson. A few years later, two more brothers Waldemar and C.
