Cody's Dash for Down Syndrome

The 2nd annual Cody's Dash for Down Syndrome will be held June 8th at Burnes Park in Hopkins. The event includes a kids' dash, a 5K run, a 1-mile walk, live band, food, raffle, and games for the whole family. More can be found online here.
All proceeds from this event will go to support GiGi's Playhouse Twin Cities. GiGi's Playhouses are Down syndrome awareness and education centers that provide resources, specialized teaching, and support to individuals with Down syndrome, their families, and the community. GiGi's Playhouse has a vision to see a world where individuals with Down syndrome are accepted and embraced in their families, schools, and communities. All proceeds will go towards supporting literacy programs, math programs and social programs for GiGi's Playhouse Twin Cities.

Heartbeat 5000 5K Run/Walk

The HeartBeat 5000 race is an annual event that benefits cardiovascular care at Children's Hospitals and Clinics of Minnesota.
The race has raised more than $1.7 million in just 10 years to benefit the patients and families served by Children's. Since its inception, the race has grown from just a few hundred people to over 3,000 participants and volunteers. Proceeds from HeartBeat 5000 fund cardiac programs at Children's and help advance research to improve outcomes for children with cardiac complications. Past support has been used to build capacity for the cardiac integrative operating rooms, to support cardiac family needs, and to provide support for familes who are unable to afford the advanced cardiac care that their child requires.

St. James Triathlon

First Annual St. James Triathlon This is a brand new event that will take place in beautiful rural St. James, MN on Sunday June, 23. This triathlon will be geared toward beginner triathletes but will also be fun for intermediate and veteran participants as well. The bike and run routes will be of traditional sprint course distances with a shorter swim in the St. James Municipal pool making it more friendly for beginner athletes. The course will start out with a 150 meter swim in our pool then transitioning into a 13 mile bike ride which will take you around some of the beautiful green fields of rural St. James. This course will have a minimal incline for the first quarter of the ride and then will have a gradual decline back into the transition. Overall, it is a pretty flat and fast course. The run is an out and back 5K that will take place on our local bike trail, which follows the St. James Lake. This course is also fairly flat with some gentle inclines and declines. The finish will take place next to the lake and the St. James campground. The individual entry fee is $50.00 and will be open online until June 20. Registration the day of the race will be $60.00. If you feel you would like to participate but do not know if you can do it alone then we encourage you to form a team of 2 or 3 members. Team registration is $60.00 until June 20 and registration the day of the race will be $70.00. We are very excited to offer this new event and hope to see you on race day. |

The Afton Trail Run 50KM Trail Race, is one of the most challenging and beautiful trail races anywhere. The race was established in 1994 and is now one of the oldest, largest and most competitive trail races in the country - garnering national attention and attracting runners from all over the United States and beyond. Runners World says that Afton State Park has some of the most beautiful running trails in the country and once you've run we think you will agree. Afton State Park is located within the beautiful St. Croix River valley. The start of the race is near the Visitors Center, in Afton State Park. It is a hilly, 25K loop (two loops for the 50K), winding through the park's trail system. For the most part, the trail is on well-established footing through the woodlands and prairie. There are long climbs, rising from the river bottom, up rocky ravines, and down again. More information is available online here.

In our busy, modern lives, grilling celebrates the delightful simplicity and naturally bold flavors of whole foods, and allows us to explore flavors of the world without leaving our own backyards.
Grilled Summer Vegetable Salad with Chickpeas and Basil
Enjoy the summer harvest with this delicious salad. Freshly grated parmesan provides the best flavor but experiment with other cheeses like feta, gruyère or Manchego, if you like.
Ingredients:
- 2 tablespoons extra-virgin olive oil, plus more for oiling the grill
- 1 yellow bell pepper, cored, seeded and quartered
- 1 red bell pepper, cored, seeded and quartered
- 1 small red onion, cut into thick rings
- 2 zucchini, thickly sliced lengthwise
- 2 yellow squash, thickly sliced lengthwise
- 2 cloves garlic, chopped
- 2 tablespoons red wine vinegar
- 2 tablespoons chopped basil
- 1 (15 ounce) can chickpeas, rinsed and drained
- Salt and pepper to taste
- 1/2 cup grated parmesan cheese
Method:
Oil grill grates, then preheat grill to medium high heat. Working in batches, grill peppers, onions, zucchini and squash, flipping once, until just charred in parts and tender, 6 to 8 minutes total; transfer to a large platter as done. Set aside to let cool before cutting into bite-size pieces. In a large bowl, combine grilled vegetables, garlic, vinegar, oil, basil, chickpeas, salt and pepper. Garnish with parmesan and serve immediately or cover and chill until ready to serve. Serves 4 to 6

Pearson Candy Company was founded in 1909 by P. Edward Pearson with the assistance of his two brothers John Albert and Oscar F. Pearson. A few years later, two more brothers Waldemar and C. Fritz joined the Minneapolis-based company, which began as a candy distribution firm, doing a little bit of manufacturing on the side.
