Explore Minnesota Challenge Takes Second Trip Around the State
Today -December, 2013
Anderson Race Management and Explore Minnesota Tourism have teamed up to bring you a new statewide running series called the "Explore Minnesota Challenge." This series of more than 25 races in four designated areas around the state of Minnesota encourages participation in various running, walking, biking and triathlon events.
Participants will be awarded a special Explore Minnesota Challenge lapel pin for participation in each of the regions they have finished a race. A special Explore Minnesota Challenge medal will be awarded to those who complete a total of 5 events including one in each of the four designated areas. Participants who register for the series will also receive membership in the Minnesota Distance Running Association and a starter kit. More information and registration is online here.

Polar Bear Plunge 5K for Special Olympics
March 2, Minneapolis
Looking for a "cool" way to beat the winter blues? Switch off your treadmill, and get outside for the 3rd Annual Plunge 5K! This family-friendly walk/run is a great way to embrace the exhilarating weather, boost your energy level, and warm your heart by supporting the more than 7,100 athletes of Special Olympics Minnesota. Plus, you'll get a really rad shirt for your efforts! If you're looking for a more "extreme" form of exhilaration, consider adding a little "splash" to your "dash"! This means, you will walk/run the 5K and then Plunge into Lake Calhoun. Participants plunging into the frigid waters must raise a minimum of $75. This is completely separate from the 5K fee. Plunging for Plunge 5K participants is from 10-10:30 am.

100% Irish for A Day

Not Irish? No problem! Join us on Saturday, March 9 at Lake Harriet and be 100% Irish for a Day! Run a fun 5K or a timed 10 mile and enjoy some liquid gold at the finish line in the FINNEGANS beer garden. Wear your finest Irish ensemble; there will be prizes for best dressed! Get your Irish on with the Shake Your Shamrock 8K Run and 5K run/walk. Join us for a festive race event brought to you by FrontRunner and Midwest Events. Food Allergy Awareness Walk
March 23, Bloomington
Did you know more than 200,000 Minnesotans, including 55,000 school-age children, have food allergies. Minnesota's annual Food Allergy Awareness Walk at the Mall of America will feature entertainment by the Splatter Sisters, and will offer refreshments that accommodate those with food allergies. The Walk route and restroom facilities are wheelchair and stroller accessible. Walkers can walk as long or short as they choose, or stay in Macy's Courtyard to enjoy music and entertainment. online registration is available here and more information is online here minnesotafoodallergy.org where you will also find printable walk registration forms. Donations can be submitted online, or in person the day of the walk. Participants of any age and ability are encouraged to create teams with family members, friends, co-workers, classmates, and neighbors. Wright County Law Enforcement Torch Run Half Marathon & 5K for Special Olympics Minnesota May 4

Support the 7,200 athletes of Special Olympics Minnesota through this challenging half marathon course or family-friendly 5K walk/run along the beautiful, rolling hills of the Wright County countryside! The 3rd annual Wright County Law Enforcement Torch Run Half Marathon & 5K for Special Olympics Minnesota will be held Saturday, May 4, 2013 at Sturges Park in Buffalo, MN. Registration is available at wrightcounty.kintera.org. Half marathon fees are $50 until 3/4/13, $60 until 4/4/13 and $75 until 5/4/13 and the 5K is $25.
Med City Marathon May 25 & 26

Med City Marathon, Half Marathon and 5k is coming up on May 26th! The 18th annual race is always a memorable Memorial Day Weekend! Come early on Saturday May 25th for the Health Expo and find all sorts of great deals! Also on Saturday is the Med City Kids Marathon, a 1.2 mile fun run with over 700 kids from Kindergarten to 8th grade. Following that is the Mascot races, Toddler Trot, Diaper Dash and 5K! Catch all the action Saturday and Sunday on the Jumboton! Sunday will showcase the Marathon, Half Marathon, 4-person Relay and 20 Miler. Finisher medals will be given to all Marathoners, Half Marathoners and 5K runners. All event runners will receive technical t-shirts. Randy's Run 5K May 27

Randy's Run celebrates service, freedom and future by donating every cent raised on this family fun, timed 5K on Memorial Day to the Randy's Run scholarship at Eden Prairie High School.  In it's 4th year, Randy's Run is known for the great Nike shirt, awesome awards and prizes but most of all for bringing families out to thank the service of our uniformed citizens. The loop 5K is held at Purgatory Creek Park at 8:00 a.m. on Memorial Day, ahead of the annual Memorial Day service honoring veterans and military personnel. William A. Irvin 5K Registration Opens March 14
Saturday, June 21 Registration for the 20th annual William A. Irvin 5K in Duluth opens at 12:01 a.m. (CDT) on Thursday, March 14. The field limit for the 2013 race is 1,900 - the same as last year when the capacity was reached in late April. To register, runners should visit GrandmasMarathon.com beginning Thursday. The entry fee is $30. The 3.1-mile run begins at 6 p.m. on Friday, June 21, near the permanently docked William A. Irvin ore boat on Duluth's waterfront and kicks off the running events during Grandma's Marathon weekend. Registration remains open for the 37th annual Grandma's Marathon, while the entry process for the 23rd annual Garry Bjorklund Half Marathon is now closed.

Prepping for Spring Outdoor Running - Plan a progressive running program to prevent injuries.
- A five-minute warm-up followed by stretching exercises is essential.
- Cross-train and slowly begin to increase your mileage. This will help to prevent injuries and increase your endurance if you need to work your way back from any old injuries.
- Start your run with your body feeling "a little cool." Your body temperature will increase when you start running.
- Run with a partner. If you run alone, be sure to carry some form of identification and let others know your planned route.

Creamy Cashew "Risotto" with Butternut Squash
This dairy-free risotto-style rice dish uses pureed cashews soaked overnight to create a rich and creamy sauce that transforms frozen rice into a delicious meal.
Ingredients:
- 1 cup raw cashews
- 2 1/2 cups 1/2-inch cubes peeled butternut squash
- 1 1/2 cup unsweetened soy milk, almond milk or rice milk
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 3/4 cup low-sodium vegetable broth
- 1 (20 ounce) package 365 Everyday Value frozen Organic Brown Rice
- 1/4 cup finely chopped parsley
- 2 tablespoons minced fresh sage
- 1/4 teaspoon ground black pepper
