Bubbles, Bubbles, Bubbles

"Come quickly, my brothers, for I am drinking the stars!" With this legendary quote first uttered by Dom Perignon to his fellow Benedictine brothers at the Abbey of Hautvillers, this unique sparkling wine that would become known around the world as Champagne began its long and storied journey. Although he did not necessarily invent Champagne, as still wines from this area of France had been noted to lightly sparkle since the Middle Ages, Dom Perignon's work amongst the barrels and bottles of Hautvillers' cellars provided a superior foundation for understanding and producing top-quality bubbly. Originally charged by his superiors to remove the devilish bubbles that caused so many bottles in the Abbey cellars to explode, Perignon instead created some of the most outstanding sparkling wine that the world had ever seen. It did not take very long for the rest of the world to see it also, and deliberate Champagne production began to take off in the early 18th century.   READ MORE>
