News from the Dairy, Early June 2013.
Sarah's Musings
Well I’m not quite sure where May went but it appeared to go very quickly, hence our rather overdue Newsletter, for which I apologise. Despite the weather we have been very busy selling cheese, running Cheese Making Courses and trying to keep up with the new legislation that keeps being sent our way.
But these elements all add up to the varied and wonderful life that is running a small business!
In the Dairy - Michael
Under the watchful eye of Michael, our Head Cheese Maker, much cheese has been made this month. Michael has been making cheese for more than 50 years, his surname is Wisdom and this is very apt, as he is a very wise, clever, quiet and thoughtful man who is always striving to perfect whichever cheese he is making. His record keeping, attention to detail, knowledge, interest and passion for making cheese are astounding.
Brighton Blue
Our newest cheese, Brighton Blue seems to be gaining quite a following about which we are very pleased and Mark is spending many hours trying to devise ways of making more of this seemingly popular cheese.
Mark, Did you Hear him?
Some of you might have heard Mark's dulcet tones on Radio 2 on Simon Mayo’s Drive Time programme talking about making cheese at home and his new word ‘squidgery’ which he used to aptly describe our Saint Giles Cheese
