Ahhh...Coconut
The aromas of summer are enticing...fresh cut grass, neighbors grilling, flowers wafting, and one of my favorites--the delightful smell of coconut. Coconut delights our sense of smell like a tropical paradise and its great for our bodies inside and out.
Coconut can soothe your nerves, boost your energy, cool and moisten your skin, nourish your liver, and soften your emotions. Summer is time to go a little coconutty!

Restore Tranquility
Do your nerves get a little frazzled at times...maybe it's the heat of summer or maybe it's just life. Coconut can soothe agitated nerves. Here's how it works. A fatty layer called the myelin sheath coats all nerves. The sheath guides nerve impulses and insulates the neuron from hyperactivity. When the fatty sheath layer is dried out from stress, inflammation, or toxification, your nerves become easily agitated and you may feel anxious....the connection between physiology and emotions!  Have you heard? In our quest to regulate our weight, we have gone no-fat/low-fat in our diets. This was and is misguided. We need healthy fats. We need to be fat burners for slow, calming energy. We have become sugar burners for energy and a host of mental and physical problems accompany that. When the fatty sheath becomes dried out we become easily agitated and nervous. A teaspoon of organic coconut oil daily is a neuron comfort food that restores tranquility.

Coconut Oil
- Has a lower oxidation point so does not become rancid easily.
- Can be safely heated to higher temperatures - best oil for sauteing and frying.
- Mixes with lime juice for a quick and nourishing salad dressing
- Makes stove top popcorn special. Gives a light,
slightly nutty flavor. - Lowers cholesterol and stimulates fat metabolism if overweight and restores body fat if underweight.
- Moistens an agitated liver. Replenishes a liver depleted in fats and cools an overheated liver which also cools emotions like anger, jealousy, and the agitation of judging. Restores grace and kindness.
- Has anti-viral, anti-microbial, and anti-inflammatory properties

You can eat 1 tsp of coconut oil daily or better yet use it in your food. Saute veggies in coconut oil or make curries. The MCTs (Medium Chain Triglyceride) fats found in coconut oil are different from the composition of most fats. These have been found to boost cognitive performance in older adults and especially those with Alzheimer's and other memory conditions. The energy hungry brain craves glucose. When our glucose regulation is disrupted---common for most of us to some degree-- the brain's structure and function are compromised. Coconut oil translates into a much needed alternative fuel source that "recharges metabolic processes within the brain, resulting in an almost immediate improvement in cognitive function." Coconut Oil for Skin and Hair.
It's easy. Just use coconut oil daily on your skin to moisturize and nourish your skin. Coconut oil cools excess body heat and soothes dry skin from eczema, psoriasis, and sunburn Some say that just plain coconut oil is a good sunscreen. Put a little bit of coconut oil on your hair before you wash it to protect your hair.

DIY Coconut Popsicles
I Love These!!!!!
1 can full fat coconut milk
3 Tbls maple syrup
1 Tbls Vanilla Extract
1 Tbls shredded coconut
Mix all ingredients and pour into popsicle molds
Options:
1 bar of semisweet chocolate--heat and pour over frozen popsicles.
Extra treat---shake some cayenne pepper over the chocolate while still warm.
This is an amazing treat. I have tried various recipes--this is the most natural and my personal favorite. If you can get it -- Trader Joes extra creamy coconut milk itastes wonderful with a thick consistency.
