Time to Make the Doughnuts
Editors Note: Pate Kennedy and Ron Oldham have purchased the Downyflake Restaurant business, which will open under their ownership this Monday, April 7. Pate sent this message to explain the purchase and reminise about her time on Nantucket and the 'Flake.
We have been a bit shell shocked. Although the purchase process went very smoothly on all fronts, we just never dreamed that we would end up being the proud owners of the Downyflake.
The Downyflake goes way beyond a successful food and beverage establishment; it is an important hub to the Nantucket community and a part of our rich historical fabric. Wow! We are still trying to take the acquisition in.
No one has been able to determine the exact date of the original Downyflake on Nantucket. (Please see Editor's Note at the end of this article for research on the history of the restaurant.
I remember, as one of the opening staff members of the original Atlantic Café when it was owned and operated by Bill Hunter and Tom Kennelly, how we would go next door to buy a couple of dozen doughnuts to share while we were all setting up the restaurant in the morning. Back then, the Downyflake was closed on Wednesdays, and if it was raining on a Wednesday, the AC was crazy.

Sean was only eight years old at the time, and the Flake was his favorite place to dine. I would check in on my day off with the boys at the Café, help put away the weekly food delivery, and then Sean and I would walk next door for breakfast.

After the fire at the Downy location on South Water, Karsten Reinemo and his wife Julie took over the operation and moved it to mid-island.
Mark Hogan and Susan Tate have operated the restaurant for fifteen years. They have sold us the business and the name. Karsten still owns the property, and was instrumental in helping Ron and I work through the process of purchasing from Mark and Susan.
I actually know Karsten from those "good old days" of the AC. Ron became an acquaintance of his through his RopeWalk years. Ron would work long shifts, and sometimes would take a break in the afternoons just to walk the Straight Wharf docks for a few minutes. Karsten and Ron would run into each other from time to time and stop to chat.
There is much that has a "full circle" flavor to it in our pursuit of the Downy project.
When I first came to Nantucket, I was teaching school in Washington, DC during the winter and coming to the island for the summers. My first summer, I worked as a waitress at the Rose & Crown. This was when there were just a few restaurants downtown - we still had "happy hour" - and it would be five deep at the bars.
Mark Hogan was managing at the Tavern, and Susan Tate was managing at the Brotherhood - Sean liked to eat at the Brotherhood, too. Every now and then he would talk me into standing in the line of people that went half way up Broad Street, waiting to get into the Brotherhood to get a burger.
In those days, the restaurant pace was five times what it is now, because there were so few of them. The atmosphere at the Brotherhood was frenetic. The waitresses there were all gorgeous and exotic, and the feel of the place was always somewhat dramatic. I remember always being impressed how Susan flitted about the Bro'hood dining room, "cool as a cucumber," with a businesslike and efficient manner.
When the boys at the Café coaxed me into giving up my "real" job as a teacher in DC to become a full time manager on their staff, I role modeled myself on Susan.
If you can believe it, Ron and I are both from DC originally. Ron even went to high school with one of my brothers. He began his cooking on the Maryland-Delaware shore. His background is diverse. One winter he worked at the Inn at Little Washington in Virginia, which is still, to this day, one of the foremost fine dining establishments on the east coast.
And on the other end of the spectrum, he was the first Kitchen Manager and helped open the original Margaritaville in Key West for Jimmy Buffet.
He first came to Nantucket in the mid-nineties as the Sous Chef out at the Westender, when it was managed by Carrie Turner and her partner Tim Quish. Ron spent three summers out in Madaket. During one of these summers, Joe Pantorno and Jimmy Buffet were having lunch together at the Westender after a fishing day. Ron went out to say "hello" to Jimmy, who introduced him to Joe. A few winters later, Joe and Ron ran into each other in Key West, and Joe invited him up to work at the RopeWalk.
Since we first met and married, Ron and I have been looking for a business of our own. However, it was always difficult to leave Joe, who was an extremely generous employer and who treated us with such respect. We also had an amazing team of workers surrounding us at the RopeWalk.
When the lease at the RopeWalk was not renewed two years ago, Ron and I began looking more seriously for a restaurant project. Although we both love Nantucket, we had been prepared to move, if need be. However, we had not found that right spot. We did not feel the need to do a project as big as the RopeWalk with a staff of sixty-five. Yet, the other operations that we found were too small.
We both love busy. We feel that serving good food under the pressure of a high volume of customer turn-over to be our professional strength and passion.
Indeed, the Downyflake promises to be right mixture of complexity and manageability. The Downyflake is a big financial and mid-life life commitment for us. We are of course nervous.
Mark and Susan are going to be a part of our opening team for the first few weeks. We look forward to working side by side with them in the weeks ahead and meeting all of their regular customers, about whom they speak so fondly.

Small businesses breed a staff that becomes family. This is especially true in the restaurant industry. I came to Nantucket as a young woman facing the huge challenge of raising her son alone. The Nantucket restaurant community has been very good to me. There were generous employers, helpful fellow staff members, and concerned patrons who assisted me along the way. One of my fondest memories of those early years is, when cocktail waitressing one summer at the Club Car, Michael Shannon feeding my boy rack of lamb on the back kitchen stoop.
Years later when I took over the management at the RopeWalk, Joe (Pantorno) and I made our loyal staff and repeat customers a first priority. It has been a little empty for me in these last two years, as Ron and I have stumbled in finding our next "niche." We are tremendously excited about working with our new, adopted Downeyflake staff.
One of the aspects about Nantucket that captivated me when I first came to the island thirty-five years ago was the deep respect for historical preservation in our community. The Downyflake is not a fancy restaurant by any means. However, it is an "oldie but goodie." The Downy diner atmosphere has a "retro" feel. I am sure that Ron and I will put our personal stamp on the operation over the years, but for now our main focus is to preserve all aspects of the business "as is." We are very proud to become a part of an establishment that celebrates the historical whimsy of our "faraway" island.

Librarian Libby Oldham has found that the earliest mention that she sees in NHA records is a newspaper announcing some sort of opening for the Downyflake on May 5, 1935. It was started by Fran Perelman's father.
And elsewhere in the NHA archives: The Downyflake was an early franchise operation of which only one or two survived, including the Nantucket one. It was originally located on South Water Street [where Fog Island Cafe is located today].
In 1965 Gordon MacDonald, the then-owner of the Downyflake Restaurant, offered to sell it to the Norwegian-born Karsten Reinemo Sr. and his wife Marion. The Reinemos expanded it from a two-month per year summer operation to a year-round business that opened at 5.30 A.M. for fishermen and other working people. In 1991, an early-morning gas explosion in the original Downyflake building in the heart of town nearly proved fatal to Karsten, but he survived, and the Reinemo family rebuilt where the Downyflake continues to prosper.
Karsten's father took it over in 1968, when it was located on South Water Street with Hardy's Hardware on the south side, and diagonally across S. Water from the Opera House Restaurant.
White Elephant Names Chef Thomas William Pearson Executive Chef Of Brant Point Grill
Chef Thomas William Pearson has been appointed Executive Chef at the Brant Point Grill at the White Elephant hotel. He was promoted from Executive Sous Chef at Brant Point Grill's sister restaurant, TOPPER'S at The Wauwinet. Pearson had relocated to Nantucket from the UK after falling in love with the island's natural beauty.
"We are thrilled to introduce this new talent to the kitchen. Chef Pearson prides himself on his relationships with local producers and farmers and cooking food at a very high standard. He's worked with several big kitchens, including Michelin-starred, Star Inn in England," said Khaled Hashem, Managing Director of Nantucket Island Resorts.

Pearson will oversee all aspects of daily kitchen operations at Brant Point Grill as well as the in-room dining program and menus for private events at the White Elephant. He will make frequent visits to nearby island farms to source the fruits, vegetables and herbs, which will be showcased on Brant Point Grill's menus.
TOPPER'S recently received a perfect score of 100 in the food category on Conde Nast Traveler's "Gold List". Both the White Elephant and The Wauwinet were also included on this list, as well as Travel + Leisure's "Top 500 Hotels" list, which was announced this month.
Chef Pearson will unveil a new menu this spring featuring some of his favorite recipes. "I'm attracted to recipes that teach new cooking techniques. I love to read cookbooks that teach me a new method I haven't seen before," said Chef Pearson.
With more than 10 years of culinary experience, Pearson also held chef positions at The Fearrington House Restaurant, a Relais & Ch√¢teux property in North Carolina, as well as the Pipe and Glass Inn and The Star Inn, both Michelin-starred restaurants in the UK.
Donald Kolp Returns to The Brotherhood
as General Manager
The Brotherhood of Thieves welcomes restaurant veteran Donald Kolp back as their new General Manager, a position he previously held from 2005-2008. Returning to the island after three years as Beverage Manager at the famous Smith & Wollensky in Boston, Kolp brings to the job twenty-five years of culinary leadership experience and a personal appreciation of the local community .
A graduate of the Culinary Institute of America, Kolp began his career as a Sous Chef in California, first at Stars and Stars Oakville Cafe in San Francisco and then at Auberge du Soleil in Napa Valley. After a teaching stint at The New England Culinary Institute, he opened his own restaurant, Smokejack's, in Burlington, Vermont in 1997, ultimately earning a Rising Star award from Restaurant and Hospitality Magazine.
From 1999-2004, Don was the Executive Chef for Nantucket Island Resort's Harbor House, White Elephant and Brant Point Grill. During that time, he oversaw the re-conception and positioning of The Brant Point Grill as a premier New England steak and lobster house.
He then moved to The Brotherhood as General Manager during a time of transformation and expansion for the original, ground level 60-seat pub. Kolp organized and managed the Brotherhood's reopening as the two-story 212-seater it is today while successfully maintaining the feel of the popular, old property. "Everyone comes to The Brotherhood," he says.
From 2008-2011, Kolp was Food and Beverage Manager at The Great Harbor Yacht Club, overseeing the launch of the club and supervising its multiple food and beverage outlets including a fine dining restaurant, a family friendly grill, multiple function rooms, two snacks bars and all off-site catering.
Don says, "I have lived in a lot of places and have never been so attached to as many friends as well as felt so much a part of a community."

This calendar is now used by all island non-profits and event planners to schedule their major fundraisers and avoid date conflicts with other major events. If you're planning an event and the date is set, please email me with your information to get it on the calendar. It may prevent someone else from booking a similar event on the same date.
