Happy New Year! 

Forget all those crazy new year's resolutions!

 

How about some easy changes you can live with? Things like: 

  • eating a few extra servings of fruits and veggies every day
  • going for a 15 minute walk after lunch or dinner
  • getting up from your computer every hour and walking around for at least 5 minutes
  • eating a handful of nuts for a snack
  • parking a little farther away in the parking lot
  • going to bed and getting up at about the same time  
  • sending one daily email of gratitude to a friend or colleague 

Yes, it's really true. These small changes can add up to BIG benefits for your health. So perhaps you can set aside those resolutions and just go take a quick walk around the block (but dress warmly if you're here in snowy MN!)

Black-eyed Peas and Kale Salad

 

Serves 4.

 

Black eyed peas, served as part of a traditional Southern meal on New Year's Day, are supposed to bring prosperity and good luck. They are usually paired with some variety of greens. This simple and easy salad is a great accompaniment to just about any main dish you may be preparing to celebrate the new year. 

 

* 2 tbsp. olive oil

* 1-1/2 tbsp. apple cider vinegar

* 1-1/2 tbsp. Dijon mustard

* 2 tsp. honey

* 1/4 tsp. salt

* 1/4 tsp. freshly ground black pepper

* 1 lb. baby kale

* 1 (15-oz.) can black-eyed peas, drained and rinsed

* 1/4 c. diced red onion

* 2 roasted red peppers (from jar), diced 

  1. In a large salad bowl, whisk together the olive oil, vinegar, mustard, honey, salt and pepper.
  2. Add the kale, black-eyed peas, onion and red peppers to the bowl, and toss to combine.
