Elderberries!
This past spring, we planted blueberries, blackberries and elderberries.
We were amazed at the elderberry progress: they started off as 4 inch root stock and grew to about 6 feet this year!
The squirrel and bird population enjoyed the blueberries and blackberries. But we got to the elderberries!
We made a wonderful honey-based compote with them and used it swirled into parfaits and on top of pumpkin pancakes.
We look forward to some berry good dishes next year!
